Chewy Stir-Fried Chicken Gizzards
Perfect as a Drinking Snack or a Side Dish! Making Stir-Fried Chicken Gizzards
My husband and children love this dish, so I make it for them occasionally! It’s simple to prepare, and the taste and nutrition are top-notch! It’s a dish that’s both a fantastic accompaniment to drinks and a satisfying side for rice.
Main Ingredients
- Chicken Gizzards 2 bags
- 1/2 Onion
- 1/2 Bell Pepper (use different colors for a more vibrant dish)
- 1/2 Stalk Green Onion
- 1 Tbsp Minced Garlic
- 1 Red Chili Pepper (or use Cheongyang chili for extra heat)
Seasoning and Other Ingredients
- 1 Tbsp Herb Salt
- 3 Small Cups Soju (for removing gamey smell)
- 2 Tbsp Avocado Oil or Cooking Oil
- 1 Tsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds

Cooking Instructions
Step 1
First, prepare all your ingredients: chicken gizzards, onion, green onion, and red chili pepper. Wash all vegetables thoroughly.
Step 2
Take the chicken gizzards out of the bag and rinse them thoroughly under running water. Washing them carefully helps remove any impurities or odors.
Step 3
Pour about 3 small cups of soju over the cleaned chicken gizzards to help eliminate any gamey smell. Ensure the soju covers all the gizzards.
Step 4
Let the chicken gizzards soak in the soju for about 10 minutes. After soaking, drain any excess liquid and sprinkle 1 tablespoon of herb salt evenly for seasoning. You can substitute regular salt if herb salt is unavailable.
Step 5
While the gizzards are soaking, prepare the vegetables. Slice the green onion and red chili pepper diagonally. Cut the onion and bell pepper into bite-sized cubes. Using different colored bell peppers will make the finished dish look more appealing.
Step 6
Heat a stir-fry pan over medium heat and add 2 tablespoons of avocado oil or cooking oil. It’s best to start cooking when the pan is sufficiently hot.
Step 7
Once the pan is hot, add the sliced green onion and 1 tablespoon of minced garlic. Stir-fry to release their fragrance.
Step 8
Continue to stir-fry over medium-low heat until the aroma of the green onion and garlic fully develops. Be careful not to burn the garlic, and allow the sweetness of the green onion to infuse into the oil.
Step 9
When the green onion turns golden brown and releases a fragrant aroma, add the seasoned chicken gizzards to the pan. Stir-fry quickly over high heat until the gizzards turn white on the outside. Finally, add 1 teaspoon of sesame oil and give it a quick toss to enhance the flavor.
Step 10
Transfer the well-stir-fried chicken gizzards to a serving dish. Sprinkle 1 tablespoon of toasted sesame seeds on top for an added nutty flavor and visual appeal. Your delicious stir-fried chicken gizzards are now complete! Serve and enjoy them while they are warm.
