Chewy Stir-Fried Chicken Gizzards

As I’ve mentioned before, I absolutely love chicken dishes! Growing up in a large family, we ate a lot of chicken gizzards, which we called ‘ddongjip’, and chicken feet. My parents often made these dishes because they were affordable, packed with nutrition, and always a hit. Nowadays, a pre-cleaned pack of chicken gizzards costs only about 3,400 won at the supermarket – incredibly inexpensive compared to other ingredients! This recipe transforms one pack into a fantastic plate of stir-fried gizzards. They have a wonderfully chewy texture, are high in protein with very little fat, and are rich in Vitamin B and iron, making them a truly nutritious choice. Shall we get cooking?

Main Ingredients

  • 1 pack (500g) Chicken Gizzards
  • 1/3 cup Soju (for blanching)
  • 1/2 Onion
  • 5 Korean Green Chilies (Cheongyang peppers)
  • 5 cloves Garlic, thinly sliced (optional)
  • Appropriate amount of Flour (for cleaning)

Gizzard Marinade

  • 1.5 Tbsp Minced Garlic
  • 1/2 stalk Scallion, finely chopped
  • 2 Tbsp Sesame Oil
  • Pinch of Black Pepper
  • 1/3 Tbsp Salt
  • 1.5 Tbsp Oyster Sauce
  • 1 Tbsp Cooking Wine (Mirin or Rice Wine)
  • 1 Tbsp Sesame Seeds

Cooking Instructions

Step 1

1. Prepare the chicken gizzards while they are still chilled. (If using frozen, thaw them completely in the refrigerator beforehand.) To remove any gamey odor, rub them thoroughly with a handful of coarse sea salt and rinse. Next, add a handful of flour and rub again vigorously before rinsing clean. Drain them thoroughly in a colander.
2. Bring water to a boil in a pot and add 1/3 cup of soju. Add the prepared gizzards and blanch for about 20 seconds. Immediately remove them and rinse under cold water. Cut the gizzards into bite-sized pieces (about 4 pieces each). In a bowl, combine the gizzards with 1.5 Tbsp minced garlic, 1/2 stalk of finely chopped scallion, 2 Tbsp sesame oil, a pinch of black pepper, 1/3 Tbsp salt, 1.5 Tbsp oyster sauce, 1 Tbsp cooking wine, and 1 Tbsp sesame seeds. Mix well, then marinate in the refrigerator for 30 minutes to 1 hour to let the flavors meld.

3. Place the marinated gizzards in a pan along with the 5 sliced garlic cloves. Stir-fry over high heat for about 2 minutes. Once some of the moisture has evaporated,

4. Add the 1/2 sliced onion and 5 chopped Korean green chilies. Continue to stir-fry until all ingredients are cooked through. And your delicious stir-fried chicken gizzards are ready!

**Tips for Success:**
* Keep the heat on high throughout the entire cooking process. This is key to achieving that desirable chewy texture.
* Taste as you go and adjust the seasoning with salt or pepper to your preference. I like to add a generous amount of pepper for a little kick.
