Main Ingredients

  • 1 Squid (fresh)
  • 15 Scallions (fresh)

Cooking Instructions

Step 1

It’s important to cleanly remove the squid’s innards. Carefully insert your finger into one end of the squid’s body and gently pull out the mass of innards located inside. The key is to handle it gently to avoid tearing the squid’s body.

Step 1

Step 2

Rinse the inside of the body with clean water to wash away any remaining innards or impurities. If you feel a hard cartilage (bone) inside the body when you touch it, pull it out using your finger or a knife and remove it completely. This step ensures the squid is easy and pleasant to eat.

Step 2

Step 3

Removing the squid’s eyes and beak can be a delicate task. If you find this step a bit squeamish, it’s okay to cut off the parts around the eyes and the hard beak attached to the base of the tentacles with a knife. Removing them cleanly makes them easier to eat.

Step 3

Step 4

Peeling the squid’s skin not only makes it look cleaner but also results in a much softer texture, making it taste even better. To peel, you can gently scrape off the skin using a spoon or the back of a knife.

Step 4

Step 5

Let’s prepare the water for blanching the scallions. Fill a pot with plenty of water and add 1/2 tablespoon of coarse salt. Once the water is boiling vigorously, first add the thick white parts of the scallions and blanch for about 15-20 seconds. This will slightly soften the white parts.

Step 5

Step 6

Add the green leafy parts of the scallions to the water and blanch for just about 10 seconds more. Be careful not to over-blanch, as it will diminish the scallions’ crisp texture. Immediately rinse the blanched scallions in cold water to cool them down, then drain them well to maintain their vibrant color.

Step 6

Step 7

Now it’s time to blanch the squid. When the water returns to a rolling boil, add the prepared squid whole. To prevent the squid pieces from sticking together, gently stir them and blanch for no more than about 1 minute. Overcooked squid becomes tough, so lightly cooking it preserves its chewy texture.

Step 7

Step 8

Remove the blanched squid, let it cool slightly, and then cut it into bite-sized pieces. Cut the squid body into long, rectangular pieces about 2-3 cm in length, and separate the tentacles to cut them lengthwise. This will make rolling them with the scallions easier.

Step 8

Step 9

Now, let’s combine and roll the squid and scallions. Place the blanched and drained white parts of the scallions lengthwise over the squid pieces. Arranging the white parts of the scallions neatly on top of the squid will help create a beautiful shape when rolled.

Step 9

Step 10

Finally, wrap the entire piece with the green parts of the scallions placed on top of the squid, and roll it up tightly to complete the Squid and Scallion Rolls! Arrange them attractively on a plate to enjoy your fresh and healthy dish. You can also serve it with a side of soy-vinegar dipping sauce or mustard sauce, according to your preference.
