Since potatoes are in season, I’ve been making a lot of potato dishes! 🙂 Today, I’m introducing a soy sauce braised potato side dish that kids love, perfect as a staple side. Using only the moisture released from the potatoes when mixed with corn syrup, you can make a delicious, sweet and savory soy sauce braised potato dish that won’t fall apart. Ingredients

  • 3 potatoes
  • 3 frankfurter sausages
  • 3 Tbsp oligosaccharide (or corn syrup)
  • 2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Step 1

Peel the potatoes and cut them into small cubes, about 1/2 inch (1.5 cm) in size. Rinse the cut potatoes lightly under running water to remove excess starch. This helps prevent them from breaking apart during cooking and allows them to absorb the sauce better.

In a wide pan, add the cubed potatoes. Pour in 3 tablespoons of oligosaccharide (or corn syrup) and gently toss to coat the potatoes evenly. This step encourages the potatoes to release their natural moisture.

Let the potatoes coated with oligosaccharide sit in the pan for about 20 minutes. This resting period allows the potatoes to draw out enough of their own liquid, which is essential for the moisture-free braising method.

While the potatoes are resting, slice the frankfurter sausages into bite-sized pieces (about 1/2 inch or 1.5 cm thick). For a cleaner taste, especially for children, you can briefly blanch the sausages in hot water to remove excess oil. (This step is optional).

After 20 minutes, check the pan. You’ll notice that a good amount of liquid has been released from the potatoes. We will cook the potatoes using only this natural liquid, a ‘moisture-free’ method that ensures the potatoes remain intact and develop a wonderfully chewy texture!

Now, it’s time to add the seasoning ingredients for flavor. Add 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds to the pan.

Turn on the heat to medium-low. Stir gently with a spatula to combine all ingredients. Once the mixture starts to simmer, continue to braise for about 5 minutes, allowing the potatoes to absorb some of the sauce.

Reduce the heat to low and cover the pan with a lid. Let it simmer gently for about 3 minutes. Since the potatoes are cut small, the moisture within the pan is sufficient to cook them thoroughly and tenderly.

Finally, add the sliced sausages to the pan. Remove the lid and quickly stir everything together to combine. Be careful not to let the sausages stick to the bottom, and lightly stir-fry until the sauce coats them evenly.
