  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1-2 Tbsp Sugar (adjust to your preference)
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Cooking Wine (Mirin, etc.)
  • 2 Tbsp Mayonnaise (makes the jinmi-chae tender!)
  • 2 drizzles of Corn Syrup or Oligodang (adjust to your preference)
  • A pinch of Toasted Sesame Seeds
  • 0.5-1 Tbsp Sesame Oil (for finishing)

Cooking Instructions

Step 1

First, prepare 300g of dried shredded squid (jinmi-chae), the star of our delicious stir-fry. (This is approximately 2 bowls, measured using a standard instant ramen bowl.)

To ensure the jinmi-chae becomes tender and moist, not tough, soak it in lukewarm or cool water for about 5 to 7 minutes. Be careful not to soak it for too long, as this can make the texture mushy.

After soaking, cut the jinmi-chae into bite-sized pieces (about 5-7 cm long) using scissors or a knife. Drain the cut jinmi-chae thoroughly in a colander. This is crucial to help the seasoning absorb well and prevent excess water during cooking.
