A Perfect Makgeolli Snack: Shrimp and Wild Chive Pancake Recipe
Even on a sunny day like today, this shrimp and wild chive pancake brings back the cozy feeling of a rainy day. I used a pack of Korean wild chives for two dishes, and this is the second one. The delightful combination of chewy shrimp and the spring aroma of wild chives is truly exceptional. Paired with a glass of makgeolli (Korean rice wine), it’s simply divine! It’s a simple yet delicious special snack or accompaniment for drinks.
Ingredients- 1 handful of fresh Korean wild chives (about 50g)
- 10-15 cocktail shrimp (adjust according to size)
- 1.5 cups of pancake mix (approx. 150g)
- 1 egg
- 1 Cheongyang pepper (for a spicy kick)
- 1/2 red bell pepper (for color)
- 1 Tbsp cooking wine (like Mirin) – to remove shrimp’s fishy odor
- A pinch of black pepper – to remove shrimp’s fishy odor
- 1.5 cups of cold water (adjust batter consistency)
- Cooking oil (generous amount)
Cooking Instructions
Step 1
For a crispy texture, mix 1.5 cups of pancake mix with 1.5 cups of cold water in a 1:1 ratio to create the batter. (Gradually add water to adjust the consistency.) Be careful not to make the batter too thin or too thick. Finally, crack in 1 egg and mix well.
Step 2
Wash the Korean wild chives thoroughly under running water, trim the root ends slightly, and cut them into bite-sized pieces about 5cm long. Finely chop the Cheongyang pepper after removing the seeds for a spicy flavor, and thinly slice or mince the red bell pepper for color.
Step 3
Pat the cleaned cocktail shrimp dry with paper towels. Cut them into bite-sized pieces (halving them usually works well). Sprinkle 1 Tbsp of cooking wine and a pinch of black pepper over the shrimp to eliminate any fishy odor, and let them marinate briefly.
Step 4
Now, add the prepared wild chives, cocktail shrimp, and chopped Cheongyang and red peppers to the batter. Mix everything together thoroughly. The red bell pepper might appear less vibrant once mixed into the batter, so consider using it as a topping when frying. Gently combine all ingredients until well incorporated.
Step 5
Heat a pan over medium heat and generously add cooking oil. Ladle about a small bowlful of the batter onto the pan. Instead of making large pancakes, smaller, round ones are easier to flip and eat. Fry until both sides are golden brown and cooked through.
