- 80g Korean green peppers (select fresh and shiny ones)
- 1/4 onion (adds sweetness)
- 1 red chili pepper (for color and a hint of spiciness)
- 1 tbsp toasted sesame seeds (for nutty flavor)
Bulgogi Sauce- 4 Tbsp soy sauce (use regular brewed soy sauce, not soup soy sauce)
- 3 Tbsp corn syrup (for gloss and sweetness. Can substitute with oligosaccharide syrup)
- 1 Tbsp oyster sauce (the secret ingredient for deep umami)
- 2 Tbsp rice wine (Mirin) (removes gamey odors and enhances flavor)

Cooking Instructions

First, prepare the shiitake mushrooms. Gently wipe off any dirt with a damp paper towel under running water. Then, slice them into bite-sized pieces, about 0.5cm thick, so they aren’t too thin.

Trim the stems off the Korean green peppers. Cut them into pieces that are easy to eat in one bite, allowing the sauce to penetrate well. If the peppers are large, cut them into three pieces; if small, cut into two.

Peel the onion and slice it thinly into strips. Slicing it this way will make it tender and allow its sweetness to infuse well when cooked.

Thinly slice the red chili pepper into strips for a beautiful color. Cut it in half lengthwise and carefully remove the seeds before slicing.

Stir everything together thoroughly until well combined to create the flavorful sauce.

Heat a pan over medium heat. Pour in all the prepared sauce and bring it to a simmer. Once the sauce is bubbling, add the Korean green peppers and stir-fry quickly for about 10 seconds. Be careful not to overcook them, as they can become mushy.

Next, add the prepared shiitake mushrooms. Increase the heat to high and stir-fry. It’s important to stir-fry rapidly to ensure the sauce coats the mushrooms evenly, preserving their chewy texture.
