  • 1 Tbsp Toasted sesame seeds
  • 1 Tbsp Sesame oil
  • 1.5 Tbsp Cooking oil (e.g., canola, vegetable)
  • A pinch of Black pepper

Cooking Instructions

Step 1

Shiitake mushrooms are a healthy ingredient known for their rich aroma and wonderfully chewy texture. When selecting fresh shiitake mushrooms, look for ones with caps that are not too widely opened, a vibrant color, and no wrinkles. They are low in fat and rich in dietary fiber, making them a great choice for a healthy diet. Shiitake mushrooms offer various benefits, including boosting immunity, potentially inhibiting cancer cell growth, and aiding in constipation prevention.

Step 1

Step 2

Prepare 5 shiitake mushrooms and 10 Korean green peppers for the stir-fry. Even though the caps are slightly open, they are perfectly fine for cooking and offer excellent flavor. For added color and flavor, we’ll also use one small onion and one red chili pepper. The white part of a 10cm leek will also be included.

Step 2

Step 3

Trim the tough stems from the shiitake mushrooms. You can gently brush off any dirt with a soft brush or clean cloth. If you prefer, you can lightly rinse them under running water, being careful not to damage the delicate gills inside the caps. The trimmed stems can be saved and used to make a flavorful broth.

Step 3

Step 4

Gently pat the cleaned shiitake mushrooms dry with a paper towel to remove excess moisture. Slice them thinly on a bias. This method of slicing allows the mushrooms to absorb the seasonings better, resulting in a more flavorful dish.

Step 4

Step 5

Trim the Korean green peppers. If any are large, slice them diagonally and remove the seeds. Smaller ones can be left whole. Slice the onion into thin strips and the red chili pepper diagonally for a visually appealing garnish.

Step 5

Step 6

While you can add seasonings during cooking, mixing them beforehand ensures even distribution and makes the cooking process smoother. In a bowl, combine 1 tablespoon of oyster sauce, 2 tablespoons of soy sauce, and 1 tablespoon of fish sauce.

Step 6

Step 7

Add 1 tablespoon of cooking wine (Mirin) and 1 tablespoon of allulose (or your preferred sweetener like corn syrup or oligosaccharide). Whisk everything together well to create a smooth sauce mixture.

Step 7

Step 8

Heat 1.5 tablespoons of cooking oil in a pan over medium-low heat. Add 1 tablespoon of minced garlic and stir-fry until fragrant and lightly golden. Be careful not to burn the garlic.

Step 8

Step 9

Once the garlic is fragrant and lightly browned, pour in the prepared sauce mixture. Bring the sauce to a simmer. Then, add the Korean green peppers and onion and stir-fry. Adding the green peppers first allows them to cook slightly and absorb the sauce better without becoming overly soft.

Step 9

Step 10

Stir-fry the green peppers until they begin to soften and absorb the sauce. Then, add the sliced shiitake mushrooms and stir-fry for just 1-2 minutes. Overcooking the shiitake mushrooms can release too much moisture, making them tough, so a quick stir-fry over medium heat is recommended.

Step 10

Step 11

Once the shiitake mushrooms are coated with the sauce, add the sliced leek (or onion greens) and red chili pepper. Stir-fry quickly for a final moment, just until the vegetables are slightly tender but still vibrant.

Step 11

Step 12

Turn off the heat. Drizzle in 1 tablespoon of sesame oil and sprinkle generously with 1 tablespoon of toasted sesame seeds. A pinch of black pepper adds a final touch of flavor. Your delicious and chewy shiitake mushroom and green pepper stir-fry is now ready!

Step 13

Step 14

If you’re making this for young children, you might consider omitting the Korean green peppers.
