Ingredients
- 150g of Seaweed (Sargassum species, salted type)
- 1/2 block of Tofu
- 1 tsp Salt (for blanching seaweed)
- 2/3 Tbsp Fish Sauce
- 1 tsp Minced Garlic
- 1 tsp Plum Extract
- 1 Tbsp Sesame Oil
- A pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
Begin by preparing the salted seaweed. Place the seaweed in a bowl and rinse it thoroughly under running water several times. It’s crucial to wash away all the salt.

Fill a pot with plenty of water and add 1 teaspoon of salt. Bring the water to a rolling boil. Once boiling, carefully add the washed seaweed.

As the seaweed cooks, it will turn a vibrant green. Blanch it for about 3 to 5 minutes to maintain its pleasant chewiness. Be careful not to overcook, as it can become mushy.

Drain the blanched seaweed and immediately rinse it under cold water. Rinsing in cold water helps preserve its crisp texture. Shake off as much excess water as possible.

Wrap the tofu in a cheesecloth or clean kitchen towel and squeeze out all the excess water. Removing moisture from the tofu is essential to prevent the salad from becoming watery and bland.
