Introducing a simple ‘Sea Gourd Gochujang Salad’ recipe that becomes a rice thief even without many side dishes on a hot summer day. Sea gourd, with its appealing salty flavor and chewy texture, is also delicious when paired with ssamjang or anchovies, and makes a special treat when fried until crispy. This ingredient, called ‘miyeokgwi’ because it resembles a human ear, has a delightful chewiness that’s even better than kelp. With just a gochujang-based sauce, you can create a wonderful summer side dish. Perfect as a side for rice or even as a snack with drinks, try making this sea gourd salad right away!
Main Ingredients- 3 handfuls prepared dried sea gourd (approx. 30g)
- 3 Tbsp cooking oil
Cooking Instructions
Step 1
Gently separate the dried sea gourd, which you can buy at the market, into individual pieces by hand. Be careful as it can crumble since it’s dried.
Step 2
From the separated sea gourd pieces, discard any tough or hard stem parts found in the center, as they can affect the texture.
Step 3
As you separate the sea gourd pieces, naturally rub them with your hands. This process will clean off any impurities or excess salt attached to the surface of the sea gourd. No separate washing is needed; this step is sufficient for preparation.
Step 4
Place the prepared sea gourd in a sieve and let excess oil drain slightly. (Optional: If you sprinkle a little sugar at this stage, you can make crispy fried sea gourd snacks.)
Step 5
In a small bowl, combine 2 Tbsp gochujang, 1 Tbsp maesilcheong, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Mix them thoroughly with a spoon to create a delicious seasoning sauce.
Step 6
Add the prepared seasoning sauce to the sea gourd you prepared earlier and mix well by gently kneading with your hands. Ensure the sauce is evenly distributed throughout the sea gourd. By seasoning directly without frying, you’ll achieve a delicious sea gourd salad with a wonderfully chewy texture. Enjoy it as a tasty side dish for your rice!
