Basic Ingredients

  • 14 dumpling wrappers
  • A little olive oil (for greasing the pan)
  • 3 tablespoons butter (for the sauce)

Ravioli Filling Ingredients

  • 2 strips thick-cut bacon (approx. 80g), finely diced
  • 2 fresh shiitake mushrooms, finely minced
  • 1/4 sweet onion, finely minced
  • 1 fresh egg (helps bind the filling ingredients)
  • 2 cups (approx. 200g) soft ricotta cheese
  • 1/2 cup (approx. 50g) flavorful Grana Padano cheese, finely grated
  • A pinch of salt (to taste)
  • A pinch of black pepper (to taste)

Cooking Instructions

Prepare the filling ingredients that will add flavor. Dice the bacon into approximately 0.5cm pieces, and mince the shiitake mushrooms and onion as finely as possible. Finely dicing the ingredients makes the filling smoother and helps it bind well, like a dumpling filling.

Heat about 1 teaspoon of olive oil in a pan over medium-low heat. Add the diced bacon, shiitake mushrooms, and onion. Sauté slowly until the bacon fat renders and the vegetables become translucent. Once they are lightly browned, turn off the heat and let the mixture cool completely. Using hot ingredients can cause the dough to cook prematurely.

In a large bowl, place the soft ricotta cheese. Add the finely grated Grana Padano cheese, the cooled sautéed vegetables and bacon. Crack in the fresh egg, and add a pinch of salt and pepper. Gently mix all the ingredients together with a spatula or spoon until just combined. Avoid overmixing, as it can make the filling tough; mix only until the ingredients are incorporated.

Now it’s time to make the ravioli. Lay one dumpling wrapper flat on a clean surface. Place about 1-2 tablespoons of the prepared filling onto the center of the wrapper. Be careful not to overfill, as too much filling can cause the wrapper to burst. Lightly brush the edges of the wrapper with water to help it seal. Cover with another dumpling wrapper, then gently press down the edges with your fingers to remove any air pockets. To create a decorative edge and ensure the filling doesn’t escape during cooking, press along the edges with the back of a fork.

Fill a deep pot with plenty of water and bring it to a rolling boil. Once the water is boiling, carefully add the prepared ravioli, stirring gently to prevent them from sticking together. Once the ravioli float to the surface, continue to boil for about 3 more minutes. You can test for doneness by carefully removing one ravioli and tasting it to ensure the wrapper is translucent and the filling is cooked through.

Once the ravioli are cooked, drain them using a colander. In a pan, melt 3 tablespoons of butter over medium-low heat. Add the cooked ravioli and gently toss them until they are evenly coated with the melted butter. The added butter flavor makes them even more savory and delicious!
