It’s from the pork’s shank area, specifically the upper part of the pig’s leg, which is also used for the popular jokbal (braised pig’s trotters). This whole leg cut offers a delightful bone-chewing experience, and the meat itself is incredibly chewy, reminiscent of roasted jokbal. Known as ‘jjoldarissal’ or ‘jjoldegi’, this unusual cut was a delightful surprise! I marinated it simply with fragrant cumin sauce, garlic herb salt, and pepper, then easily prepared it in the air fryer. The result is a visually appealing and incredibly flavorful roasted pork dish that you can enjoy at home. The exterior is golden brown and slightly crisp, while the inside remains moist and delightfully chewy. This is the ‘whole leg meat’, also called ‘jjoldarissal’ or ‘jjoldegi’, a cut from the pork’s shank. With its chewy texture expected from the lean meat, and bones interspersed throughout, it promises a fun experience of gnawing on the bones, much like ribs. Just looking at it makes my mouth water!

Now, let’s prepare the basic marinade to enhance the meat’s flavor. This process, sometimes called ‘rubbing’, involves using seasonings to bring out the meat’s natural taste and add depth of flavor. You don’t need to know complex terms; seasoning meat before cooking is a fundamental step. For this recipe, I’ve chosen aromatic garlic herb salt, black pepper, and flavorful cumin sauce.

Sprinkle the cumin sauce, garlic herb salt, and black pepper evenly over the whole leg meat and rub it in thoroughly. Ensure you coat all sides, front, back, and edges, ensuring the seasoning penetrates well. If you have multiple pieces, season each one sequentially. Marinate the seasoned meat in the refrigerator for a while to allow the flavors to meld. About 30 minutes should suffice.
