Tteokgalbi Patty Ingredients
- 150g minced pork (leaner cuts recommended)
- 2 Tbsp onion, finely minced
- 1 Tbsp green onion (scallion), finely minced
- 1 Tbsp carrot, finely minced
Tteokgalbi Seasoning
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp starch (cornstarch or potato starch)
- 1 tsp minced garlic
- 0.5 tsp sesame oil
- Pinch of black pepper (to taste)
Delicious Glaze Sauce
- 2 Tbsp soy sauce
- 2 Tbsp water
- 1 Tbsp oligosaccharide (or corn syrup)
- 0.5 Tbsp sugar
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp starch (cornstarch or potato starch)
- 1 tsp minced garlic
- 0.5 tsp sesame oil
- Pinch of black pepper (to taste)
Delicious Glaze Sauce
- 2 Tbsp soy sauce
- 2 Tbsp water
- 1 Tbsp oligosaccharide (or corn syrup)
- 0.5 Tbsp sugar
Cooking Instructions
Step 1
First, finely mince the onion, green onion, and carrot for the tteokgalbi patty. Mincing them very finely ensures a pleasant texture that even picky eaters will enjoy.
Step 2
In a large bowl, combine the 150g of minced pork. Add all the tteokgalbi seasoning ingredients: 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp starch, 1 tsp minced garlic, 0.5 tsp sesame oil, and a pinch of black pepper.
Step 3
Now, add the finely minced onion, green onion, and carrot that you prepared earlier. Including these vegetables will enhance both the flavor and texture of the tteokgalbi.

This is the most crucial step! Knead the mixture thoroughly with your hands until it develops a sticky, cohesive texture. Kneading for at least 5 minutes is key to achieving the right consistency.

Sufficient kneading will make the meat chewy and springy, significantly improving the texture and taste of the tteokgalbi. Knead vigorously until the mixture becomes smooth and elastic, much like mochi dough!
Step 6
If you’re using hard, refrigerated tteokbokki rice cakes, it’s time to soften them. Briefly soak the rice cakes in hot water until they become pliable. This will help them integrate well with the tteokgalbi.
Step 7
Divide the well-kneaded pork mixture into 10 equal portions. Portioning them into bite-sized pieces will make them easier to shape and cook.
Step 8
Flatten each portion of the pork mixture and place a softened tteokbokki rice cake in the center. Carefully wrap the pork around the rice cake, sealing the edges tightly to prevent it from coming out. (Tip: If pan-frying, you can roll the shaped tteokgalbi in a pan and cook until golden brown for an extra delicious result. Here, we’ll be using the oven!)
Step 9
Bake the tteokgalbi in a preheated oven at 195°C (385°F) for about 12 minutes. Cooking times may vary depending on your oven’s specifications, so keep an eye on them and adjust as needed.
Step 10
While the tteokgalbi is baking, let’s prepare the delicious glaze sauce for the exterior. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp water, 1 Tbsp oligosaccharide, and 0.5 Tbsp sugar. Mix well.
Step 11
Pour the prepared glaze sauce into a microwave-safe container and heat for about 1 minute, or until it slightly boils. This will thicken the sauce and give it a beautiful sheen.

Remove the baked tteokgalbi from the oven. While still warm, brush the prepared glaze sauce generously over the exterior. This will give them a glossy, appetizing finish.
