Easy Homemade Pork Belly Donburi Bowl: A Flavorful Delight
Tired of grilling pork belly every day? For all you meat lovers out there, I’ve created a delicious donburi bowl using pork belly! The chewy pork belly, thoroughly coated in a savory and sweet special sauce, combined with crisp stir-fried onions, makes for an incredibly satisfying meal. Let’s whip up this gourmet dish with simple ingredients!
Main Ingredients- Pork Belly 2 strips (approx. 200-250g)
- 1 Onion (medium size)
- Scallion threads or Perilla leaves (for garnish)
- 2 servings Cooked rice
Cooking Instructions
Step 1
Let’s start by making the special sauce that will bring out the amazing flavor of your pork belly donburi! In a bowl, combine 3 tablespoons of Katsuobushi Noodle Dashi Soy Sauce and 3 tablespoons of Oligodang. Stir well until the sweetener is dissolved.
Step 2
Next, add 3 tablespoons of water, 1 tablespoon of Mirin or Cooking Sake (this helps to remove any gamey odors), a pinch of salt for seasoning, and 1 tablespoon of fresh minced garlic. Whisk everything together thoroughly to create your delicious sauce.
Step 3
Peel and wash the onion. Then, thinly slice it into strips. These strips will be placed on top of the rice, so aim for a consistent thickness. Slicing too thick might take longer to cook.

Now, it’s time to cook the star of the show – the pork belly! Heat a pan over medium heat. Add the 2 strips of pork belly and cook until golden brown on both sides. Since pork belly releases a lot of fat, you can dab excess grease with paper towels as needed.

While the pork belly is cooking, use the rendered pork fat in the pan to stir-fry the thinly sliced onions. The key here is to cook the onions until they are slightly tender but still retain a pleasant crispness, rather than becoming overly soft. Once the onions are cooked to your liking, remove them from the pan and set them aside.

Divide the warm cooked rice into two serving bowls. Top each bowl of rice with half of the stir-fried onions.

Cut the cooked pork belly in the pan into bite-sized pieces (about 2-3 cm). Reduce the heat to medium-low. Pour the prepared special sauce over the pork belly. Stir and coat the pork belly evenly with the sauce, allowing it to simmer and thicken slightly. Add about 3 dashes of black pepper for an extra layer of flavor. Once the sauce has reduced and the pork belly looks glossy, arrange it attractively over the rice and onions.
