Main Ingredients

  • Fresh oysters 300g
  • Cleaned seaweed (tot) 300g
  • 1/2 green onion (finely chopped)
  • 1/4 onion (thinly sliced)
  • 1 kiwi (peeled and thinly sliced)
  • A handful of young greens (e.g., baby spinach or your favorite greens)

Cooking Instructions

Step 1

First, rinse the seaweed thoroughly under running water several times to remove any dirt or impurities. Blanch the seaweed in boiling water for about 30 seconds to 1 minute to maintain its crunchy texture; be careful not to overcook, as it can become mushy. After blanching, rinse the seaweed in cold water, squeeze out excess water, and cut it into bite-sized pieces.

Step 2

Gently wash the fresh oysters in lightly salted water or rice water to remove any debris. If any shell fragments are attached, carefully remove them. Rinse again under running water and drain well. Ensuring the oysters are clean is crucial for freshness.

Step 3

Thinly slice the onion. Finely chop the green onion. Wash and drain the young greens or any other fresh vegetables you are using.

Step 4

In a bowl, combine the gochujang, gochugaru, vinegar, brown sugar, minced garlic, and sesame seeds. Whisk everything together until well combined to create a flavorful dressing. Feel free to adjust the amount of vinegar and sugar according to your preference.

In a larger bowl, combine the prepared seaweed, oysters, sliced onion, and young greens. Add the prepared dressing and gently toss everything together, being careful not to mash the oysters. Mix gently until all ingredients are evenly coated with the dressing.

Step 6

Finally, add the peeled and thinly sliced kiwi and gently mix once more. The sweetness and tanginess of the kiwi will enhance the overall flavor of the oyster and seaweed salad. Plate the finished salad attractively and enjoy your delicious creation!
