Chewy Oyster Mushroom and Ham Stir-Fry: A Perfect Rice Side Dish

While stir-fried shiitake mushrooms are often prepared, today I tried stir-frying them with chewy oyster mushrooms and savory ham. The rich flavor from the ham combined with the mildness of the mushrooms creates a delicious rice side dish without being greasy. Make your dining table richer with this simple yet wonderful recipe.
Ingredients- Oyster mushrooms 1 handful (approx. 100g)
- Ham 30g (choose your favorite type)
- 1/2 Onion
- 1 Red chili pepper
- 1/2 Green onion
- 2 Tbsp Perilla oil (Deulgireum)
- 2 Tbsp Anchovy sauce (Myeolchi aekjeot)
- 1 Tbsp Minced garlic
Cooking Instructions
Step 1
Wash the oyster mushrooms under running water, trim the tough ends, and tear them into bite-sized pieces. Bring a pot of water to a boil with 1 tablespoon of salt. Once boiling, add the torn oyster mushrooms and blanch for about 30 seconds to 1 minute. Press them down gently to ensure they are fully submerged. After blanching, rinse them under cold water and squeeze out any excess moisture.
Step 2
Slice the ham into thin strips, about 3-5mm thick. Thinly slice the onion, remove the seeds from the red chili pepper and chop it, and slice the green onion diagonally.
Step 3
Heat 2 tablespoons of perilla oil in a pan. The nutty aroma of perilla oil will further enhance the flavors of the ingredients.
Step 4
Once the oil is warm, add the sliced ham first and stir-fry until lightly browned. As the ham starts to release its savory oils, add the sliced onion and stir-fry together until the onion becomes translucent.
Step 5
Once the onion is somewhat cooked, add the squeezed oyster mushrooms and stir-fry with the ham and onion, mixing well. Be careful not to overcook the mushrooms to maintain their chewy texture.
Step 6
Now it’s time to season. Add 2 tablespoons of anchovy sauce for a savory depth of flavor, and 1 tablespoon of minced garlic for aroma. You can use soy sauce instead of anchovy sauce, but anchovy sauce adds a richer taste.
Step 7
Finally, add the chopped red chili pepper and green onion, and stir-fry for another 1-2 minutes until all ingredients are well combined. The colorful red chili pepper and green onion add visual appeal and enhance the overall flavor.
Step 8
Your delicious stir-fry with chewy oyster mushrooms and savory ham is ready! Slicing the ham thinly allows its texture to blend wonderfully with the mushrooms. If needed, adjust the seasoning with a pinch of salt at the end. This dish is excellent served over hot rice as a donburi or as a side dish with any meal.
