Sandwich Ingredients

  • Gyeonggi Mushrooms (Baekseon, Sunjeong, Gonji No. 7, etc.) 400g
  • 1/2 Eggplant
  • 1 Leek
  • 1 Sweet Potato
  • 6 Shrimp
  • 4 Mini Cabbages
  • 4-5 cloves Garlic
  • 1/4 head Broccoli
  • Salt to taste
  • Pepper to taste
  • 2 Tbsp Olive Oil

Cooking Instructions

Step 1

1. Prepare Mushrooms: Rinse the Gyeonggi mushrooms (Baekseon, Sunjeong, Gonji No. 7) under running water and pat them dry.
2. Prepare Vegetables: Slice the eggplant into 2cm pieces, halving them lengthwise if thick. Cut the broccoli into bite-sized florets. Trim the mini cabbages and leek into similar bite-sized pieces. Peel the sweet potato and dice it into cubes the same size as the leek.

3. Prepare Shrimp: Peel and devein the shrimp, leaving the tail on for presentation. Trim the heads.
4. Marinate Vegetables: In a bowl, combine the sliced eggplant, broccoli, mini cabbage, and leek. Season with 1/2 tsp salt, 1/2 tsp pepper, and 1 Tbsp olive oil. Toss well to marinate.
5. Season Shrimp: Lightly season the dried shrimp with 1/2 tsp salt, 1/2 tsp pepper, and a little olive oil, then toss to coat.

6. Let Flavors Mingle: Set aside the marinated vegetables and seasoned shrimp separately for about 5 minutes. This resting period allows the flavors to meld beautifully.

A good sequence ensures even cooking.
