Mushroom Pollack Roe Pasta with a Satisfying Texture from King Oyster Mushrooms
Let’s make a fun and uniquely textured pasta using king oyster mushrooms, which pair wonderfully with the popping sensation of pollack roe. The chewy mushrooms and savory roe create a delightful dish.
Ingredients- King Oyster Mushrooms 300g (1 pack)
- Pollack Roe 1/2 piece
- Spaghetti 1 serving
- Salt 1 tsp (for boiling pasta)
- Olive Oil 1 Tbsp
- Butter 20g
- Soy Sauce 1 tsp
- Egg Yolk 1
Cooking Instructions
Step 1
First, prepare the ‘King Oyster Mushrooms’ which will be key to the flavor of this pasta. You can use the whole pack or portion it out as needed. These mushrooms are known for their unique chewy texture.
Step 2
There’s no need to wash or extensively prepare the mushrooms. Simply tear any large mushrooms into two pieces. This simple preparation helps enhance the mushroom’s natural flavor.
Step 3
Bring a large pot of water to a boil for cooking the pasta. Once it’s at a rolling boil, add 1 tsp of salt and the spaghetti. Cook the pasta according to package directions, but aim for ‘al dente’ – about 1-2 minutes less than the suggested time, as it will cook further in the sauce.
Step 4
In a separate small bowl, prepare the pollack roe. Carefully remove the membrane using the back of a knife, then scoop out the roe. Add 20g of butter and 1 tsp of soy sauce to the roe. Mix these ingredients gently to create the pollack roe sauce base. You want to keep some of the roe intact for that delightful popping sensation.
Step 5
Once the spaghetti is cooked, reserve about 1 cup of the pasta water, then drain the rest. To prevent the noodles from sticking, lightly toss them with 1 Tbsp of olive oil. This will keep them separated and glossy.
Step 6
Heat 1 Tbsp of olive oil in a pan over medium heat. Add the torn king oyster mushrooms and sauté until they are lightly browned and tender, being careful not to burn them. Sautéing them well will bring out their savory aroma.
Step 7
When the mushrooms have softened and wilted slightly, add the prepared pollack roe sauce to the pan. Then, add the drained spaghetti. Toss everything together well to combine. If the sauce seems too thick, add a little of the reserved pasta water, a tablespoon at a time, to reach your desired consistency.
Step 8
Transfer the finished Mushroom Pollack Roe Pasta to a serving plate. If you have Parmesan cheese, sprinkle some over the top for added flavor. Finally, carefully place the egg yolk in the center.
