Easy and Healthy Side Dish: Konjac and Chicken Breast Soy Braise
A healthy and delicious side dish perfect for kids, made with konjac and chicken breast, which are great for dieting. This recipe offers a delightful texture combination and a savory flavor that everyone will love.
Main Ingredients- 400g Chicken breast
- 1 large packet Konjac
- 2 Bay leaves
- 1 sachet (2g) Bonito flakes
- 1-2 Korean chili peppers (optional, to taste)
Seasoning Ingredients- 6 Tbsp Soy sauce
- 4 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Mirin (or cooking sake/white wine)
- 1 tsp Sugar
- A little Sesame oil
- 400ml Water

Cooking Instructions
Step 1
First, prepare the konjac. Slice the konjac into bite-sized pieces, ensuring they are not too thin, to maintain a pleasant chewy texture.
Step 2
Bring a pot of water to a rolling boil and add 1 teaspoon of vinegar. Add the sliced konjac and blanch for about 3 minutes until slightly softened. This step helps remove any unpleasant odor from the konjac. After blanching, rinse the konjac under cold water and drain well.
Step 3
Prepare the chicken breast. If you have sliced chicken breast, it’s convenient to use. Otherwise, tear a whole chicken breast into large, bite-sized pieces by hand. Pour the hot water used for blanching the konjac over the chicken breast to help remove any excess fat, making it more tender and lean.
Step 4
Make the braising sauce. In a bowl, combine the soy sauce, oligosaccharide, mirin, and sugar. Mix them well. Set aside the sesame oil for now; it will be added at the very end to preserve its aroma.
Step 5
Now, begin the cooking process. In a pot, add the prepared konjac and the mixed soy sauce mixture. Add the bay leaves and bonito flakes. Bring to a boil over medium-high heat and simmer for about 3 minutes to allow the flavors to meld.
Step 6
After 3 minutes, add the chicken breast to the pot. If you prefer a spicy kick, add the sliced Korean chili peppers. Reduce the heat to medium-low and let it simmer until the liquid has reduced to about one-third of the original amount. I simmered for about 10 minutes, but feel free to adjust the cooking time to achieve your desired consistency.
Step 7
Once the liquid has sufficiently reduced, turn off the heat. Drizzle in the sesame oil and sprinkle with toasted sesame seeds. Give it a gentle mix. Your delicious konjac and chicken breast braise is now complete! Enjoy it with warm rice.
