How to Make Delicious King Oyster Mushroom Stir-fry Easily!
While we often encounter various types of mushrooms, we tend to make similar stir-fries. This time, I tried making a King Oyster Mushroom stir-fry. My kids, who usually don’t eat mushrooms well, loved it and asked for seconds! I’m sharing a simple yet incredibly delicious King Oyster Mushroom stir-fry recipe!
Main Ingredients- 1 pack King Oyster Mushrooms (trim the base and tear into bite-sized pieces)
- 1/2 Onion (thinly sliced)
- A little Bell Pepper (use various colors for visual appeal, thinly sliced)
- 1/2 Tbsp Minced Garlic
- A little Carrot (thinly sliced)
- A little Green Onion (chopped, optional)
Sauce- 1 Tbsp Oyster Sauce
- 1/2 Tbsp Oligodang (or corn syrup)
- A pinch of Black Pepper
- 1 Tbsp Oyster Sauce

Cooking Instructions
Step 1
First, it’s important to prepare the King Oyster Mushrooms properly. Trim off the tough base, then tear the mushrooms into manageable, bite-sized pieces, about 3-4 cm long. This helps the sauce to coat evenly, making them more flavorful.
Step 2
Prepare the vegetables to be stir-fried. Thinly slice the onion. Slice the bell pepper and carrot into similar thin strips for a visually appealing dish. Finely chop the green onion to add a fresh aroma.
Step 3
To achieve a wonderfully chewy texture, we’ll briefly blanch the King Oyster Mushrooms. Bring a pot of water to a boil, add a tiny pinch of salt, and immerse the prepared mushrooms for just about 30 seconds. Be careful not to overcook, as they can become mushy.
Step 4
After blanching, quickly drain the mushrooms and rinse them under cold water. Then, gently squeeze out excess water using your hands. This step prevents the stir-fry from becoming watery and ensures a satisfying chewy texture.
Step 5
Now, let’s get stir-frying! Heat a generous amount of cooking oil in a pan over low heat. Add the minced garlic and stir-fry slowly until fragrant. It’s crucial to cook the garlic gently without burning it to create a fragrant garlic oil.

Once the garlic is fragrant, add the sliced onion, carrot, and bell pepper. Stir-fry over medium heat until the onion becomes translucent. Then, add the prepared King Oyster Mushrooms and continue to stir-fry until all ingredients are well combined.

Time to add the flavor! Pour in the oyster sauce (1 Tbsp) and oligodang (1/2 Tbsp), and add a pinch of black pepper. Stir-fry quickly over high heat to evaporate any excess moisture and ensure the sauce coats everything evenly. Finally, toss in the chopped green onions and stir for another moment.
