Introducing a delicious King Oyster Mushroom Stir-Fry with a wonderfully chewy and tender texture. King Oyster mushrooms, also known as Giant Oyster mushrooms or King Trumpet mushrooms, are a cultivated variety of oyster mushrooms. Originally from Southern Europe, they are characterized by their lower moisture content compared to other mushrooms, making them excellent for storage. Wrap them in newspaper and store them in the refrigerator to keep them fresh for longer. These mushrooms are packed with nutrients, boasting 7 times more Vitamin C than oyster mushrooms and 10 times more than enoki mushrooms. They also contain 9 out of 10 essential amino acids, along with high levels of minerals like calcium and iron. Look for firm, springy mushrooms with a distinct aroma for the best quality. Today, we’ll be making this fantastic stir-fry following Chef Min Yo-han’s ‘Best Recipe’ method. This simple yet flavorful dish is perfect for a home-cooked meal!

Cooking Instructions
Step 1
First, prepare 4 King Oyster Mushrooms. You can trim a small portion off the tough bottom if needed for a cleaner presentation.
Step 2
Slice the prepared mushrooms into about 0.5 cm thick rounds, then cut these rounds into strips of approximately 0.5 cm width. Feel free to adjust the thickness based on your preference.
Step 3
Refer to the thickness of the julienned mushrooms. This size will provide a pleasant chewiness when cooked.
Step 4
Now, bring a pot of water to a boil and blanch the julienned King Oyster Mushrooms for about 1 minute. This step is crucial for achieving a delightful chewy texture.
Step 5
Immediately rinse the blanched mushrooms under cold water to stop the cooking process and cool them down. Gently squeeze out any excess water. You’ll already notice their distinct chewiness at this stage.
Step 6
In a cold pan (do not preheat), add 1.5 Tbsp of sesame oil and 1.5 Tbsp of minced garlic. It’s important not to heat the pan beforehand because garlic contains starch and sesame oil has a low smoke point, both of which can cause burning. Sautéing them together in a cold pan allows the garlic’s flavor to infuse the oil without burning.
Step 7
Once the garlic becomes fragrant and lightly golden, add the squeezed King Oyster Mushroom strips to the pan and stir-fry them together.
Step 8
Next, add 1.5 Tbsp of soy sauce and 1.5 Tbsp of oyster sauce in equal amounts. These will provide a rich umami flavor.
Step 9
Finally, add 1.5 Tbsp of corn syrup (or honey) and stir-fry briefly until everything is well combined. Avoid overcooking the corn syrup, as it can burn easily. It’s best to add it towards the very end, or even stir it in after turning off the heat, allowing residual heat to mix it through. This adds a lovely sheen and a subtle sweetness.
Step 10
