Main Ingredients- 3 King Oyster Mushrooms
- 2 slices Butter (approx. 20g)
- Small amount of Yellow Bell Pepper (for garnish)
- Small amount of Red Bell Pepper (for garnish)
- 1 Cheongyang Pepper (optional, for added spice)
- 1 Tbsp Minced Garlic
Sauce- 3 Tbsp Soy Sauce
- 3 Tbsp Cooking Wine (Mirin or Cheongju)
- 1.5 Tbsp Oligodang (or corn syrup)
- 3 Tbsp Soy Sauce
- 3 Tbsp Cooking Wine (Mirin or Cheongju)
- 1.5 Tbsp Oligodang (or corn syrup)
Cooking Instructions
Step 1
Prepare 3 fresh king oyster mushrooms. Gently wipe off any dirt or blemishes from the surface of the mushrooms using a damp kitchen towel. Avoid washing them with water, as excess moisture can affect the final texture.
Step 2
Slice the cleaned king oyster mushrooms into round pieces, about 1 cm thick. Cutting them to a consistent thickness is key to achieving a scallop-like appearance.
Step 3
Lightly score the cut surfaces of the mushroom slices in a crosshatch pattern. This scoring allows the sauce to penetrate better and results in a more tender texture when cooked.
Step 4
Finely mince the yellow and red bell peppers for garnish, and the Cheongyang pepper if you desire a touch of heat. Also, prepare 1 tablespoon of minced garlic.
Step 5
In a small bowl, combine the minced bell peppers, Cheongyang pepper, and minced garlic. Add the soy sauce, cooking wine, and oligodang, then mix well to create the sauce.
Step 6
Heat a non-stick skillet over medium heat and melt the 2 slices of butter. Once the butter is melted, place the prepared king oyster mushroom slices in the pan.
Step 7
Grill the mushroom slices until they are golden brown and beautifully seared on each side. This process helps evaporate their moisture and develops a wonderfully chewy texture.
Step 8
Transfer the nicely grilled mushroom slices to a separate plate. Pour the prepared sauce into the same hot skillet and bring it to a simmer.
Step 9
Once the sauce is bubbling, reduce the heat to low. Return the grilled mushroom slices to the pan and coat them evenly with the simmering sauce.
Step 10
Continue to simmer on low heat until the sauce thickens slightly and coats the mushrooms beautifully. Be careful not to overcook, and turn off the heat once the mushrooms are glazed and tender.
