Here’s a recipe for a simple and delicious King Oyster Mushroom Rice Bowl that’s perfect for a healthy meal. Its chewy texture and savory-sweet sauce make it a satisfying dish even for those on a diet. Enjoy this quick and easy recipe!
Main Ingredients- 2 King Oyster Mushrooms
- 130g Brown Rice
- 3 Perilla Leaves (Shiso Leaves)
Cooking Instructions
Step 1
First, wash the king oyster mushrooms thoroughly. Slice them into about 2cm thick pieces. On the cut surfaces of the mushroom slices, make crisscross scores (like a diamond pattern) about 0.5cm deep. This helps the sauce penetrate better and improves the texture. Finely mince the Cheongyang pepper. (You can omit this if you prefer less spice.)
Step 2
Heat a frying pan over medium heat and add a little cooking oil. Place the scored king oyster mushroom slices in the pan and cook until they are golden brown and slightly chewy on both sides. The key is to achieve a slightly browned surface and a firm, chewy texture.
Step 3
Once the mushrooms are partially cooked, add 1 Tbsp of soy sauce to the pan. Quickly stir-fry the mushrooms with the soy sauce to prevent it from burning.
Step 4
Next, add the minced garlic and minced Cheongyang pepper to the pan. Stir-fry together for about 1 minute until fragrant. Be careful not to burn the garlic.
Step 5
Finally, add 1 Tbsp of oligosaccharide (or your preferred sweetener). Stir everything together until well combined. The oligosaccharide will add a nice glaze and create a delicious sweet and savory sauce. Let it simmer and thicken for another 1-2 minutes, allowing the sauce to coat the mushrooms.
Step 6
Serve the warm 130g of brown rice in a bowl. Generously top it with the delicious stir-fried king oyster mushrooms. Wash the 3 perilla leaves, thinly slice them into shreds, and use them as a garnish for a beautiful and appetizing King Oyster Mushroom Rice Bowl. Enjoy!
