Delicious King Oyster Mushroom Braised Dish
We’ve made a mouth-watering braised dish using king oyster mushrooms that will tantalize your taste buds.
Main Ingredients- 3 packs King Oyster Mushrooms (approx. 450g)
- 2 chili peppers (optional, for a touch of heat)
- 1 handful Garlic cloves (approx. 10-15 cloves)
Cooking Instructions
Step 1
First, lightly rinse the king oyster mushrooms and pat them dry. Avoid washing too vigorously, as this can diminish their delicate aroma.
Step 2
Cut the prepared king oyster mushrooms into bite-sized pieces. Thicker mushrooms can be halved lengthwise, while standard ones can be cut into 2-3 segments. This ensures even seasoning and a pleasant texture.
Step 3
Prepare the garlic by lightly smashing it with the side of a knife or by slicing it thinly. Slice the chili peppers diagonally for an appealing look and a hint of spiciness. You can omit or adjust the amount of chili if you prefer a milder flavor.
Step 4
Now, let’s make the braising sauce. In a pot or deep pan, combine 2 cups of anchovy-kelp broth, 100ml of soy sauce, and 2 tablespoons of sugar. Stir well. This golden ratio sauce base will enhance the mushroom’s natural flavor.

Once the sauce begins to boil, add the prepared king oyster mushrooms, minced garlic, and sliced chili peppers. Simmer over medium-low heat, allowing the mushrooms to absorb the soy sauce. Stir occasionally to ensure even coating.

After about 10 minutes of simmering, the mushrooms will start to develop a rich, appealing color. When the mushrooms have well absorbed the sauce and are flavorful, stir in 1 tablespoon of corn syrup. Cook for another minute until glossy, then turn off the heat. Corn syrup adds sweetness and a beautiful sheen.

Transfer the finished king oyster mushroom jorim to a serving dish. It makes a fantastic side dish for rice! Served over warm rice, it’s absolutely delicious. Leftovers can be stored in the refrigerator for several days.
