I wanted to try cooking mushrooms in a new way, so I decided to make them into jorim. 🙂 It’s a delightful way to enjoy mushrooms, offering a wonderfully chewy texture and a savory-sweet glaze that pairs perfectly with rice.
Main Ingredients- 5 King Oyster Mushrooms
- 12 Korean Green Chili Peppers (Gweng-gi)
- 4 cloves Garlic
Braising Sauce- 1/2 cup Water
- 1/2 cup Soy Sauce
- 3 Tbsp Corn Syrup (or Oligosaccharide)
- 2 Tbsp Rice Wine (or Mirin)
- 1 tsp Whole Peppercorns
- 1/2 cup Water

Cooking Instructions
Step 1
First, prepare all the main ingredients: the king oyster mushrooms, Korean green chili peppers, and whole garlic cloves. Using fresh ingredients will make your jorim even more delicious.
Step 2
Measure out and prepare the ingredients for the braising sauce. Getting the right ratio of soy sauce, water, syrup, rice wine, and peppercorns is key to a balanced flavor.
Step 3
Wash the king oyster mushrooms thoroughly and slice them thinly, about 0.5 cm thick. If they are too thick, the sauce might not penetrate them well.
Step 4
If your king oyster mushrooms are quite large, cut the slices in half again to make them a more manageable size for cooking. This ensures the sauce coats them evenly.
Step 5
Remove the stems from the Korean green chili peppers. Then, using a fork or a skewer, prick each pepper about three times. This prevents them from bursting while cooking and allows the sauce to seep in, making them tastier.
Step 6
Peel the whole garlic cloves and slice them thinly. The fragrant aroma of garlic will add a wonderful depth of flavor to your jorim.
Step 7
In a pot, combine 1/2 cup water, 1/2 cup soy sauce, 3 tablespoons corn syrup, 2 tablespoons rice wine, and 1 teaspoon whole peppercorns. Stir well to create the braising sauce.
Step 8
Add the thinly sliced garlic to the braising sauce. The garlic will lend a subtle aroma and enhance the overall savory profile.
Step 9
Once the braising sauce begins to boil, add all the sliced king oyster mushrooms. Don’t worry if it seems like a lot; mushrooms shrink significantly as they cook and release their moisture.
Step 10
King oyster mushrooms will reduce in size by about half as they cook and their moisture evaporates. So, don’t be surprised if the pot looks very full at first! They will shrink down as they become tender and flavorful.
Step 11
When the mushrooms have absorbed the sauce and it has reduced nicely, add the prepared Korean green chili peppers. Cook for about 1 more minute. Avoid overcooking the peppers, as they can become too soft. You want them to retain a slight crispness.
