Let me guide you through making a flavorful King Oyster Mushroom Jangjorim, packed with mushroom essence, that’s so good it’ll make you want to eat it with every meal. It’s a perfect banchan (side dish) to keep in the fridge and even kids will love this delicious recipe.
Main Ingredients- 3 King Oyster Mushrooms
- 1 piece of dried kelp (approx. 5×5 cm)
- 1 stalk of Green Onion
- 1 handful of dried Shiitake Mushrooms (approx. 5-6 mushrooms)
- 3 cloves of Garlic
- 1 piece of Radish (approx. 5 cm length)
- 1 Cheongyang Pepper (Korean chili pepper)
Braising Liquid Seasoning- 300ml Water (approx. 1.5 cups)
- 5 Tbsp Soy Sauce
- 1 Tbsp Sugar
- 1 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Mirin (or cooking sake)
- 300ml Water (approx. 1.5 cups)

Cooking Instructions
Step 1
First, trim the stem ends of the King Oyster Mushrooms. Remove any tough parts and clean them thoroughly.
Step 2
Lightly rinse the trimmed mushrooms under running water. Then, cut them in half lengthwise. After that, slice them into bite-sized pieces, about 2-3 cm thick.
Step 3
In a pot, combine 300ml of water and 5 tablespoons of soy sauce.
Step 4
Add 1 tablespoon of sugar and 1 tablespoon of oligosaccharide for sweetness. Oligosaccharide will add shine and a pleasant sweetness.
Step 5
Add the radish piece, the green onion stalk (cut into large chunks), and the handful of dried shiitake mushrooms to enhance the broth and flavor. Make a slit in the Cheongyang pepper for a touch of heat, and slice the garlic cloves in half so they absorb the seasoning well.
Step 6
Bring the mixture to a boil over high heat. Once it starts to bubble vigorously, reduce the heat to low. Cover the pot and let it simmer gently for about 15-20 minutes, allowing the flavors to meld.
Step 7
After the broth has sufficiently infused, remove and set aside the garlic and dried shiitake mushrooms. Discard the radish and green onion, and the kelp. (These ingredients will not be added back.)

Now, add the prepared King Oyster Mushrooms to the pot. Gently stir occasionally to ensure the mushrooms are evenly coated and absorb the braising liquid. Let them simmer for about 10-15 minutes until they are tender and have absorbed the flavors.
Step 9
Once the liquid has reduced to a glaze and the mushrooms look glossy, sprinkle a generous amount of toasted sesame seeds over the top for a nutty aroma.
Step 10
After adding the sesame seeds, give it a quick stir or two to mix everything together, then immediately turn off the heat. Transfer the finished King Oyster Mushroom Jangjorim to a serving dish for a delicious side dish.
