On a rainy monsoon day, this salty and irresistibly delicious side dish, made with plenty of beef and king oyster mushrooms, will instantly revive your appetite. The fantastic harmony of chewy king oyster mushrooms and tender beef will have you finishing a bowl of rice in no time.
Main Ingredients- Beef (for Jangjorim) 600g
- King oyster mushrooms 3 ea
- Cheongyang chili peppers 3 ea (optional)
- Whole garlic cloves 10 ea
Cooking Instructions
Step 1
First, removing the blood from the beef is an important step. Soak the beef in cold water for about 1 hour to drain the blood. This helps to remove any gamey odor.
Step 2
After soaking, blanch the beef in boiling water. This process helps to remove impurities and scum, resulting in a cleaner taste.
Step 3
Rinse the blanched beef under cold water and wipe off any remaining debris. This is a crucial step to ensure there is no unpleasant smell.
Step 4
Fill a pot with plenty of water, add 4 Tbsp soju, 1/2 onion, 2/3 radish, 10 whole garlic cloves, and 1 dried pollack (for enhanced flavor). Then, add the beef and boil for about 1 hour. Simmering on low heat makes the meat tender.

Once the beef is cooked, remove it from the pot while it’s still hot and slice it into bite-sized pieces (about 1.5cm thick). This cooked beef is delicious on its own and makes a great wrap with kimchi when served warm.

Clean the 3 king oyster mushrooms and slice them into large pieces, about 1cm thick. The chewy texture of the mushrooms will enrich the flavor of the Jangjorim.

If you like spicy food, slice 3 Cheongyang chili peppers diagonally. If you are serving this to children, you can omit them or adjust the spiciness.

Slice 6 whole garlic cloves thinly. The subtle garlic aroma will add depth to the Jangjorim. You can omit this if you dislike the smell of garlic.

Now, let’s make the broth that will define the taste of the Jangjorim. Mix 1 cup (200ml) of the beef broth with 2 cups (400ml) of water.

In a wide pot, combine 6 Tbsp soy sauce, 2 Tbsp oyster sauce, 2 Tbsp fish sauce, 1 Tbsp sugar, and 3 Tbsp oligosaccharide. Pour in the prepared broth (1 cup beef broth + 2 cups water) and mix well. Bring to a boil over high heat, and once it starts boiling, add the prepared beef, king oyster mushrooms, Cheongyang chili peppers, and sliced garlic.

Simmer over medium-low heat with the lid off until the sauce is reduced to a thick, gravy-like consistency. Stir occasionally to ensure the ingredients are evenly coated with the sauce.
