  • King Oyster Mushroom 1 pc
  • Radish approx. 50g
  • Scallions 2-3 stalks

Cooking Instructions

First, let’s prepare the king oyster mushrooms. Wash them thoroughly under running water. Then, finely chop them, but not so thin that they lose their texture, almost like mincing them. Heat 1/2 Tbsp of sesame oil in a pan over medium-low heat. Add the chopped mushrooms and sauté gently until fragrant. This step will enhance the mushroom’s flavor and make it blend smoothly with the spicy squid.

Next, prepare the other vegetables. Finely julienne or mince the radish. Wash and thinly slice the scallions. Cut the spicy squid into bite-sized pieces according to your preference. Combine the sautéed mushrooms, minced radish, sliced scallions, and the prepared spicy squid in a large bowl.

To add a rich, nutty aroma, let’s prepare the sesame seeds. In a small mortar or bowl, crush or grind the whole sesame seeds. You can gently pound them with a pestle or the back of a spoon. Grinding the seeds just before adding them will significantly boost their flavor.

Generously sprinkle the crushed sesame seeds over the ingredients in the bowl. Add 1/2 Tbsp of honey (or sugar) for a touch of sweetness and the remaining 1/2 Tbsp of sesame oil. Now, using chopsticks, gently toss and mix everything together, being careful not to mash the ingredients. It’s important to mix lightly so the dressing is evenly distributed.
