Introducing a special snack recipe that’s so filling and delicious, just one is enough! This recipe utilizes leftover japchae, generously stuffed inside chewy hotteok. We’ve combined Korea’s iconic street food, hotteok, with the beloved Korean dish, japchae, for a unique yet familiar taste.
Hotteok Dough Ingredients- 250g Whole wheat flour
- 50g Sweet rice flour
- 250ml Warm water
- 1 Egg
- 10g Sugar
- 4g Salt
- 5g Instant dry yeast
Cooking Instructions
Step 1
First, measure and prepare all the ingredients needed for the hotteok dough. It’s especially good to have the japchae ready and cooled beforehand. If the japchae strands are too long, they can be inconvenient to eat, so chop them finely using scissors or a knife.
Step 2
In a large bowl, combine the whole wheat flour and sweet rice flour, mixing well to prevent lumps. Then, create three wells in the flour. Place the yeast, sugar, and salt into separate wells without letting them touch each other. This prevents the yeast from coming into direct contact with the sugar and salt, which helps preserve its leavening power.
Step 3
Pour the warm water and the egg into the wells. Mix everything together with a spatula or your hands, kneading until a cohesive dough forms. If the dough seems too wet, adjust the water slightly. Once the dough is formed, cover the bowl with plastic wrap and let it undergo its first rise in a warm place (like a proofing box, inside a turned-off microwave, or set over warm water) for about 1 hour. The dough is ready when it has doubled in size.
Step 4
After the first rise, gently punch down the dough to release the air. Then, coat your hands generously with cooking oil to prevent the dough from sticking. Now, add the finely chopped japchae filling into the dough. Carefully seal the dough around the filling, ensuring it’s well-enclosed so the japchae doesn’t leak out. Think of it like filling and pleating a dumpling.
Step 5
Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is hot, place the filled hotteok dough into the pan. After placing the hotteok in the pan, use a flat press or spatula to gently flatten it. Initially, you can use a slightly higher heat to quickly sear the outside and set the shape, then reduce the heat to medium-low to ensure the inside cooks through while browning nicely on both sides. Flip them regularly for even cooking.
Step 6
