How to Make Chewy Homemade Kalguksu Noodles

Dough Ingredients- 2 cups All-purpose flour (approx. 250g)
- 2/3 cup Lukewarm water (approx. 160ml)
- 1 pinch Salt (approx. 1g)
Cooking Instructions
Step 1
In a large bowl, combine the 2 cups of all-purpose flour and a pinch of salt. Mix lightly. Gradually pour in 2/3 cup of lukewarm water while stirring with a spoon until the dough starts to come together. If the dough seems too dry, add another 1-2 tablespoons of water.
Step 2
Once the dough has mostly formed clumps, begin kneading it with your hands. Knead for about 5-10 minutes, or until the dough is smooth, elastic, and no longer sticky. The smoother the surface, the chewier your noodles will be.
Step 3
Wrap the kneaded dough tightly with plastic wrap or place it in a sealed bag. Let it rest at room temperature for about 30 minutes. This resting period allows the gluten to relax, making the dough easier to roll out and resulting in a better texture.
Step 4
Unwrap the rested dough and place it on a floured surface. Generously sprinkle flour on the dough and your rolling pin to prevent sticking. Roll the dough out as thinly as possible. Continuously add flour as needed. Once thinly rolled, sprinkle flour on the surface, fold the dough in half, sprinkle more flour, and fold it again.
Step 5
With the folded dough, use a sharp knife to cut noodles about 2-3mm wide. To help separate the noodles easily, try to cut at a slight angle. These are your Kalguksu noodles.
Step 6
Gently separate the cut noodles, shaking off any excess flour. To store, sprinkle a little more flour on the noodles, place them in a sealed bag or container, and refrigerate for 2-3 days or freeze for up to a month. Enjoy your homemade Kalguksu!
