This is a relatively easy one-bowl baking recipe! The batter is filled with red bean paste, making it incredibly delicious. The muffins become even chewier and more satisfying the day after baking.
Muffin Batter & Filling Ingredients- 300g glutinous rice flour
- 2g baking powder
- 2g salt
- 80g sugar
- 2 large eggs (at room temperature)
- 280g milk (at room temperature)
- 10g butter (melted)
- Red bean paste (to your preference)
- Pecans or walnuts (optional)
Cooking Instructions
Step 1
In a large bowl, crack in the 2 eggs. Add 80g of sugar and 2g of salt. Whisk them together until well combined and the sugar is mostly dissolved. Then, pour in the 10g of melted butter and whisk again to create the base of your batter.

Next, add the 280g of milk. Gently whisk everything together until just combined. Avoid overmixing at this stage; a light stir is all you need.
Step 3
Now, it’s time for the dry ingredients. Sift together 300g of glutinous rice flour and 2g of baking powder directly into the wet ingredients. Sifting helps to prevent lumps and ensures a smoother batter. Use a spatula to gently fold the dry ingredients into the wet until no streaks of flour remain.
Step 4
Cover the bowl tightly with plastic wrap or transfer the batter to a piping bag. Let the batter rest in the refrigerator for at least 30 minutes to 1 hour. For an even chewier texture, you can refrigerate it overnight. This resting period allows the glutinous rice flour to properly hydrate.
Step 5
Lightly grease your muffin tin with melted butter or oil. Fill each muffin cup about one-third full with the prepared batter. Spoon a generous amount of red bean paste into the center. Then, top with more batter, ensuring the red bean paste is completely covered. Be careful not to overfill the cups; fill them about two-thirds full to allow for rising.
Step 6
If you’re using nuts, sprinkle your desired amount on top of the batter. Chopped pecans or walnuts add a lovely crunch and nutty flavor that pairs wonderfully with the sweet red bean paste. This step is entirely optional.
Step 7
Bake in a preheated oven at 180°C (350°F) for about 25 minutes, or until a skewer inserted into the center comes out clean. Baking times may vary depending on your oven. Once baked, let them cool slightly before enjoying the wonderfully chewy texture of your homemade glutinous rice muffins!
