  • 2 fresh eggs
  • 80g Swerve (or your preferred granular sweetener)
  • 120g unsalted butter, softened at room temperature
  • 100g dark chocolate bar (or chips)
  • 50g rice flour
  • 30g glutinous rice flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder

Cooking Instructions

Step 1

Start by cracking 2 fresh eggs into a bowl and gently whisking them until just combined. Don’t over-beat them.

Add 80g of Swerve (or your chosen sweetener) to the whisked eggs. Mix them together thoroughly until the eggs and sweetener are well incorporated, forming a smooth mixture. A few small bubbles are okay.

Step 3

In a separate bowl, cream together 120g of softened unsalted butter until smooth. Next, sift in 50g of rice flour, 30g of glutinous rice flour, 2 tablespoons of cocoa powder, and 1 teaspoon of baking powder. Gently fold these dry ingredients into the butter until just combined. Be careful not to overmix, as this can result in a dense texture.

Step 4

Now, combine the egg-sweetener mixture from step 2 with the butter-flour mixture from step 3 into one bowl. Gently fold everything together using a spatula, scraping the sides and bottom of the bowl, until you have a smooth, uniform batter without any lumps.

Step 5

Melt 100g of dark chocolate by placing it in a double boiler over simmering water or by microwaving it in short bursts, stirring between each interval. Once the chocolate is completely melted and smooth, pour it into the batter. Quickly stir it in until the chocolate is evenly distributed throughout the mixture. You’ll notice a rich chocolate aroma filling the air.

Step 6

Prepare your brownie pan (an 8×8 inch square pan works well) by lining it with parchment paper or greasing it lightly with butter. Carefully pour the prepared brownie batter into the pan, spreading it evenly with your spatula to create a flat surface.
