Chewy Gizzard and Whole Garlic Roast

Discover the ultimate recipe for chewy chicken gizzards with roasted whole garlic, bursting with savory flavor! We’ll guide you through perfectly tenderizing the gizzards to eliminate any gamey taste, and present two delicious variations: a spicy stir-fry and a simple salt-roasted version. The key to tender gizzards is to marinate them in milk for at least a day – this ensures a clean, mild flavor. After the milk soak, briefly boil the gizzards in water with a splash of soju or rice wine to further remove any odor. Once prepped, they are ready to be marinated and pan-fried to perfection. The spicy version, in particular, is an absolute showstopper, with its delightful chewiness and a kick of heat that makes it an ideal accompaniment to drinks. The simple salt-roasted gizzards offer a comforting, crowd-pleasing taste that’s perfect for any meal or snack.

Spicy Chicken Gizzard Stir-Fry Ingredients

  • 1 cup Cut Octopus (Optional, for enhanced flavor)
  • 1 Onion (cut into large pieces)
  • 15 Whole Garlic Cloves
  • 2 Tbsp Smoked Flavor Oil
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tsp Grated Ginger
  • 2 Tbsp Chopped Scallions
  • 1 Tsp Dried Cheongyang Pepper (or a little fresh Cheongyang pepper)
  • 4 Dried Bird’s Eye Chilies (or regular dried chilies)
  • 2 Tbsp Mirin (or Rice Wine)
  • 1 Tsp Sesame Oil
  • 1 Tsp Toasted Sesame Seeds

Cooking Instructions

Step 1

For the spicy gizzard stir-fry, combine the prepared chicken gizzards with all the marinade ingredients (soy sauce, gochugaru, smoked flavor oil, dried chilies, mirin, minced garlic, grated ginger, chopped scallions, and Cheongyang pepper) in a bowl. Gently mix to coat. Add the large chunks of onion and cut octopus (if using) and mix well. The octopus and onions will add delicious umami and texture to the gizzards. Cover and refrigerate for at least one day to allow the flavors to meld. For the salt-roasted version, simply toss the boiled gizzards with salt, pepper, rice wine, and sesame oil.

Step 1

Step 2

Heat a pan over medium heat. Add the marinated ingredients for the spicy gizzard stir-fry and stir-fry until cooked through and the sauce has thickened slightly. Be careful not to burn the ingredients. Since the gizzards are pre-boiled, they won’t need long to cook; just ensure they are heated through and the sauce is well-coated. Finish with a drizzle of sesame oil and a sprinkle of toasted sesame seeds for extra aroma.

Step 2

Step 3

For the whole garlic salt roast, heat a pan with a little cooking oil or olive oil over medium heat. Add the prepared gizzards and whole garlic cloves. Stir-fry until the garlic turns golden brown and the gizzards are lightly browned. Season with salt and pepper. Finish with a drizzle of sesame oil and toasted sesame seeds. The combination of chewy gizzards and soft, roasted garlic is delightful. This version offers a different charm compared to the spicy stir-fry. The fiery spice, complemented by the optional octopus and onions, makes for an exceptional snack or appetizer.
