When garlic is stir-fried, its pungent spiciness disappears, leaving a subtle sweetness that’s incredibly tasty. Ingredients- 350g peeled garlic
- 1 Tbsp cooking oil
- 2 Tbsp soy sauce
- 2 Tbsp mirin (rice wine)
- 2 Tbsp oligo syrup
- 1/2 Tbsp sesame oil (or perilla oil)
- Sesame seeds
Cooking Instructions
Step 1
First, prepare 350g of peeled garlic. Trim the hard root ends of the garlic cloves, wash them thoroughly, and completely pat them dry. You can glaze the garlic whole, but for easier eating and better sauce absorption, especially for children, it’s recommended to cut them in half. (Tip: Cutting the garlic in half is optional.)
Step 2
Spread the halved garlic cloves on a wide plate and microwave for 2 minutes. While you can skip this step and stir-fry directly, microwaving briefly helps to soften the garlic from the inside, preventing burning and reducing stir-frying time. (Tip: Adjust the microwaving time to ensure the garlic doesn’t become too mushy.)
Step 3
Place the microwaved garlic in a pan, add 1 Tbsp of cooking oil, and stir-fry over medium-low heat until the garlic turns golden brown and slightly toasted. Keep stirring the garlic with a spatula to ensure even browning. Once the garlic is nicely browned, add 2 Tbsp of mirin, 2 Tbsp of oligo syrup, and 2 Tbsp of soy sauce. Increase the heat to medium and continue to simmer until the sauce thickens and coats the garlic. Finally, stir in 1/2 Tbsp of sesame oil (or perilla oil) and sesame seeds to finish. (Tip: Adjust the sweetness and saltiness to your preference. If you prefer less sweetness, you can reduce the oligo syrup to 1.5 Tbsp.)
