I wanted to make a potato stew, but only had one potato left. So, I added carrots the same size as the potato, some fish cakes, and other ingredients to create this hearty stew. It feels like having multiple side dishes when you can pick and choose from the various ingredients. This dish offers a delightful mix of textures and flavors, perfect for any meal.
Seasoning Ingredients- Gochujang (Korean chili paste) 1.5 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Soy sauce 1.5 Tbsp
- Cheongju (rice wine) 2 Tbsp
- Maesilcheong (plum extract) 1 Tbsp
- Oligodang (corn syrup) 1 Tbsp
- Black pepper a pinch
- Minced garlic 1 Tbsp
Cooking Instructions
Step 1
First, let’s prepare the delicious seasoning for the fish cake and potato stew. In a pot, combine Gochujang (1.5 Tbsp), Gochugaru (1 Tbsp), Soy sauce (1.5 Tbsp), Cheongju (2 Tbsp – this adds depth and helps tenderize), Maesilcheong (1 Tbsp for a touch of sweetness), Oligodang (1 Tbsp for shine and sweetness), a pinch of Black pepper, and Minced garlic (1 Tbsp). Finely chop the white part of the green onion and add it to the pot. This flavorful mixture will coat the potatoes and fish cakes beautifully.

Now, let’s prepare the main ingredients. Peel and thoroughly wash the medium potato (1) and half carrot (1/2). Cut them into bite-sized pieces, about 1cm thick. Try to keep the thickness consistent so they cook evenly. Avoid cutting them too thinly, as they might break apart during cooking.

It’s time to add the delicious broth. Pour 1.5 cups of kelp and anchovy broth (or water if unavailable) into the pot with the prepared vegetables and seasoning. Stir everything together well to ensure the seasoning is evenly distributed. This step is crucial for a uniform flavor.
