Hello everyone! Today, I’m sharing a super simple salad recipe using the delightfully chewy enoki mushrooms that everyone loves. Even without many ingredients, you can create a special salad that stimulates your appetite with the savory richness of doenjang (soybean paste) and perilla powder. It’s great as a side dish or a light meal!

  • 2 packs Enoki mushrooms
  • 1 Cheongyang chili pepper (optional, for a spicy kick)

Cooking Instructions

Gently rinse the fresh enoki mushrooms under running water and prepare them. If there’s any soil or debris, make sure to clean them thoroughly.

Trim off the firm base of the rinsed enoki mushrooms with a knife. Removing the base helps the mushrooms separate easily and absorb the dressing better.

Tear the enoki mushrooms (with the base removed) into smaller pieces by hand, following their natural grain. This enhances the chewy texture and ensures the dressing coats them evenly.

Remove the stem from the Cheongyang chili pepper, wash it clean, then finely mince or slice it. If you don’t prefer spicy food, you can omit it or use less.

Bring a generous amount of water to a boil in a wide pot. Once boiling, add 2 pinches of salt, then add the prepared enoki mushrooms and blanch for just 10 seconds. Be careful not to overcook, as they can become mushy!

Immediately drain the blanched enoki mushrooms into a colander and let them drip dry completely. Lingering water can dilute the salad’s flavor. You can also gently squeeze them by hand.

Place the drained enoki mushrooms and the chopped Cheongyang chili pepper in a bowl. Add all the dressing ingredients: 2 Tbsp doenjang, 2 Tbsp ground perilla seeds, 1 Tbsp maesil-cheong, 1/2 Tbsp minced garlic, 1 Tbsp mirin, and 1 Tbsp perilla oil. Finally, season with 2 pinches of salt to taste. Gently mix everything together until well combined, and your delicious Enoki Mushroom Salad is ready!
