  • Toasted Sesame Seeds 1/2 Tbsp

Cooking Instructions

The dried squid strips we’re using are pre-seasoned and come in long strands. They are also known as ‘sil-chae’ or ‘gui-chae’ and have a delightfully chewy texture.

Since the dried squid strips are quite long, use scissors to cut them into bite-sized pieces, about 7 to 8 cm in length. This makes them easier to handle during cooking and eating.

Wash the 2 dried jujubes thoroughly. Remove the stems and pits. Then, using a technique called ‘돌려 깎기’ (dolryeo kkakki), thinly slice them into strips. This adds a subtle sweetness and depth of flavor.

Here’s the secret to making the dried squid extra tender! Place 1 Tbsp of mayonnaise in your palm and spread it evenly. Then, add the prepared dried squid strips and gently toss them with your hands until they are coated with mayonnaise all over.

This initial coating with mayonnaise helps to ensure the dried squid remains moist and tender after stir-frying. If you add mayonnaise directly to the squid and mix, it tends to clump. By spreading mayonnaise on your hands first and then mixing, you can ensure an even coating on all the squid strips.

In a stir-fry pan, combine 1 Tbsp cooking oil, 1/2 Tbsp sugar, 1.5 Tbsp soy sauce, 1 Tbsp cooking wine, 1 Tbsp oligosaccharide, and 1 Tbsp sesame oil to make the sauce. Bring the mixture to a rolling boil over medium-high heat, focusing on the center of the pan, to allow the seasonings to meld together.

Once the sauce has boiled, turn off the heat and let it cool slightly. Adding the squid to a scorching hot sauce can affect how it cooks.

When the sauce has cooled a bit, add the mayonnaise-coated dried squid strips and the julienned jujubes to the pan. Gently mix everything with your hands to ensure the sauce coats the squid evenly. Thin squid strips can become unevenly coated if stir-fried immediately, so massaging the sauce in by hand beforehand is crucial.
