A Delicious Side Dish with Amazing Texture: Dried Radish and Dried Shredded Squid Salad
Combining dried shredded squid with dried radish creates a side dish with double the delicious texture. This addition is perfect for stimulating your appetite during the summer with its sweet, spicy, and tangy dressing.
For Soaking Dried Radish and Dressing Base- 1 cup water
- 2 Tbsp vinegar
- 1/2 Tbsp salt
- 1 Tbsp sugar

Step 1
First, let’s prepare the soaking liquid for the dried radish. In a large bowl, combine 1 cup of water, 2 tablespoons of vinegar, 1/2 tablespoon of salt, and 1 tablespoon of sugar. Stir well until the sugar and salt are completely dissolved. This mixture will help soften the tough texture of the dried radish.
Step 2
Lightly rinse the 1 cup (about 50g) of dried radish under running water to remove any dust. Then, add it to the prepared soaking liquid. Let it soak for about 2 hours, allowing the radish to absorb the liquid and become plump and tender. You can stir it once in between to ensure even soaking.
Step 3
Trim the 50g of dried shredded squid into bite-sized pieces, cutting them to a manageable length. Place the cut squid in a bowl and add 1 tablespoon of mayonnaise. Gently mix with your hands until the squid is evenly coated and softened. The mayonnaise will coat the squid, making it absorb the seasoning well and achieve a tender texture.
Step 4
After 2 hours, check if the dried radish has become plump. Rinse the rehydrated radish lightly under cold running water to remove excess liquid and seasoning. Then, drain it in a colander and squeeze out as much water as possible with your hands. This step is crucial to prevent the dish from becoming watery or mushy.
Step 5
Now it’s time to mix everything together. Add the squeezed dried radish and the mayonnaise-coated dried shredded squid to a large mixing bowl. Sprinkle in 3 tablespoons of fine gochugaru, 1.5 tablespoons of vinegar, 1/2 tablespoon of oligo-syrup, and 1/2 tablespoon of minced garlic. Gently mix with your hands, ensuring the seasoning is evenly distributed throughout the ingredients.
Step 6
Finally, finely slice 2 Cheongyang peppers diagonally after washing them and removing the stems. Add the sliced peppers to the bowl and mix gently one more time. The addition of these peppers will enhance the spiciness and flavor, making the dish even more delicious. For a more visually appealing dish, you can also add some sliced red bell peppers. Your delicious dried radish and dried shredded squid salad is now ready!
