How to Make Spicy and Sweet Chewy Dried Filefish Stir-fry

A rice-stealing side dish that even kids love! Introducing an easy and quick recipe for a chewy dried filefish (gwepo) stir-fry. The savory dried filefish, which becomes more delicious with every chew, and the spicy-sweet sauce create a fantastic harmony, making it a perfect side dish.

Main Ingredients
  • Dried Filefish (Gwepo) 250g
  • Green Chili Pepper 1
  • Red Chili Pepper 1

Seasoning
  • Cooking Oil 2 Tbsp
  • Minced Garlic 1 Tbsp
  • Cooking Wine (Mirin) 1/3 cup (approx. 67ml)
  • Corn Syrup or Oligosaccharide 1/2 cup (approx. 100ml)
  • Gochujang (Korean Chili Paste) 2 Tbsp
  • Sesame Oil 1 Tbsp
  • Toasted Sesame Seeds 1 Tbsp

Cooking Instructions

Step 1

First, cut the dried filefish into bite-sized pieces (about 2-3 cm wide). If the filefish is too tough, you can gently wipe it with a paper towel.

Step 2

Wash the green and red chili peppers, remove the seeds, and slice them into thin rounds. Prepare the minced garlic.

Step 3

Heat a pan over medium-low heat and add 2 Tbsp of cooking oil and 1 Tbsp of minced garlic. Sauté until the garlic is fragrant, being careful not to burn it.

Step 4

Once the garlic is fragrant, add the sliced green and red chili peppers and stir-fry briefly to add color and a hint of spice.

Step 5

Next, add 2 Tbsp of gochujang, 1/3 cup of cooking wine, and 1/2 cup of corn syrup to the pan and mix the ingredients well.

Step 6

Once the sauce starts to bubble, reduce the heat to medium and let it simmer until the sauce thickens slightly.

Step 7

Add the prepared dried filefish to the pan and stir-fry, coating it evenly with the sauce. It’s important to stir-fry until the filefish is well coated with the sauce.

Step 8

When the dried filefish is well coated and has a chewy texture, turn off the heat. Finally, drizzle in 1 Tbsp of sesame oil and sprinkle with 1 Tbsp of toasted sesame seeds for added nuttiness. It’s delicious served warm or cooled as a side dish.
