Main Ingredients- 2 Semi-dried squids
- 1/2 to 1 Tbsp minced garlic
- 2 Tbsp soy sauce
- 1 Tbsp cooking wine (like Mirin)
- 1 Tbsp oligosaccharide (adjust sweetness)
- 1/3 stalk green onion
- Nuts (optional)
Cooking Instructions
Step 1
First, rinse the semi-dried squids lightly under running water. Then, cut them into bite-sized pieces (about 2-3 cm wide). If you prefer a softer texture, you can briefly blanch them (less than 10 seconds) in boiling water.
Step 2
After blanching, place the squid in a colander to drain the water completely. Remaining moisture can make the stir-fry tough.
Step 3
Prepare the delicious sauce for the squid stir-fry. Using a regular tablespoon, mix 2 Tbsp soy sauce, 1 Tbsp cooking wine, and 1 Tbsp oligosaccharide. You can substitute with corn syrup or sugar, and adjust the sweetness to your preference.
Step 4
Heat a pan over medium-low heat with a generous amount of cooking oil. Add the minced garlic and stir-fry slowly to release its aroma. Be careful not to burn the garlic, and cook until it turns golden brown to create garlic-infused oil.
Step 5
Once the garlic is fragrant, add the prepared semi-dried squid to the pan. Turn the heat to high and stir quickly just once or twice to lightly sear the surface of the squid. Overcooking will make it tough.
Step 6
Pour the prepared sauce evenly into the pan with the squid. Stir-fry quickly over high heat, just 2-3 times, to coat the squid evenly with the sauce. This quick stir-frying is key to maintaining a chewy texture.
Step 7
Finally, add thinly sliced green onions and your choice of nuts (like walnuts or almonds) to the pan. Stir them in and cook for about another minute to finish. The crispness of the green onions and the nuttiness of the nuts add to the deliciousness.
Step 8
Your appetizing side dish, semi-dried squid stir-fry, is now ready! Enjoy it with a warm bowl of rice.
