Cooking Instructions
Step 1
Let’s begin by gathering the ingredients for our delicious cheese potato cakes!
Step 2
First, peel the potatoes and cut them into bite-sized cubes.
Step 3
Place the cubed potatoes in a pot, add enough water to cover them, and boil for about 20 minutes until they are soft and tender. You’ll know they’re ready when a fork easily pierces through them.
Step 4
Drain the cooked potatoes and let them cool slightly until they are warm enough to handle. Mashing them while too hot can make shaping difficult.
Step 5
Using a masher or a fork, thoroughly mash the warm potatoes. Add 4 tablespoons of potato starch, a pinch of salt, and a pinch of black pepper to the mashed potatoes. Mix well to form a dough. If the dough is too sticky, you can add a little more starch.
Step 6
Take a portion of the potato dough, flatten it into a small disc, and place a generous amount of mozzarella cheese in the center. Don’t be shy with the cheese – it makes them extra delicious!
Step 7
Take another piece of potato dough and place it on top of the cheese, covering it completely. Gently press and seal the edges to prevent the cheese from leaking out. You can shape them into round balls or form them into squares for a different texture. Make sure to press firmly to seal.
Step 8
Heat a generous amount of cooking oil in a pan over medium-low heat. Carefully place the shaped potato cakes into the hot oil. Fry them until golden brown and delicious on all sides. Getting them nicely browned will enhance the flavor and texture 🙂
Step 9
While the fried potato cakes are cooling slightly on a wire rack, let’s prepare the glaze.
Step 10
In a small bowl, add 1 tablespoon of soy sauce.
Step 11
Add 1 tablespoon of mirin (sweet rice wine) to soften the saltiness of the soy sauce.
Step 12
Stir in 1 tablespoon of sugar for a touch of sweetness. You can adjust the sugar to your preference.
Step 13
Finally, add 1 tablespoon of water to achieve the desired glaze consistency.
Step 14
Pour the prepared glaze into the pan and bring it to a boil over medium heat. Once the glaze starts bubbling, add the fried cheese potato cakes. Gently toss them with a spatula to coat them evenly with the glaze, allowing it to thicken and adhere to the cakes. Cook until the glaze is sticky and coats the cakes beautifully.
Step 15
Isn’t it amazing how potatoes can transform into such a wonderful appetizer or snack? Here are your completed ‘Cheese Potato Cakes’ – enjoy the delightful combination of chewy texture, cheesy goodness, and sweet-savory glaze! Enjoy your meal ^^
