Fried Rice with Frozen Clams
I made fried rice using frozen clams I had stored. When mixed with the finely chopped cucumber-flavored chili peppers as a topping, the chewy texture of the clams and the crispness of the cucumber-flavored peppers harmonized wonderfully. It’s a delicious combination that brings out the best in both ingredients.
Ingredients- 1 cup frozen clam meat (thawed and squeezed dry)
- 1/4 onion, finely chopped
- 1/2 green onion, thinly sliced
- 2 Tbsp minced zucchini
- 2 cucumber-flavored chili peppers, thinly sliced (for garnish)
- 1.5 bowls cooked rice
- 3 Tbsp cooking oil
Seasoning- 2 Tbsp soy sauce
- 1 Tbsp chili powder
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp minced garlic
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp sesame seeds
- 1 Tbsp sesame oil
- 1 tsp tuna extract (for umami!)
- 2 Tbsp soy sauce
- 1 Tbsp chili powder
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp minced garlic
- 1 Tbsp plum extract (maesilcheong)
- 1 Tbsp sesame seeds
- 1 Tbsp sesame oil
- 1 tsp tuna extract (for umami!)
Cooking Instructions
Step 1
First, let’s prepare the frozen clam meat. Add just enough water to cover the clams and let them thaw. Once thawed, rinse them under cold water and squeeze out any excess moisture thoroughly. This step ensures the clams remain delightfully chewy.
Step 2
Now, let’s prepare the vegetables that will add flavor and texture to our fried rice. Finely chop the onion and the zucchini. Thinly slice the green onion for a fresh aroma. Also, have your minced garlic ready.

Next, thinly slice the cucumber-flavored chili peppers. These will be used as a fresh garnish for the fried rice, adding a delightful crispness and a hint of refreshing flavor.
Step 4
It’s time to marinate the clams. In a bowl, combine the squeezed clam meat with all the seasoning ingredients except for the tuna extract and sesame seeds (soy sauce, chili powder, cooking wine, minced garlic, and plum extract). Gently mix them together to ensure the marinade coats the clam meat evenly.

Heat the cooking oil in a pan over medium heat. Add the chopped onion, sliced green onion, minced garlic, and minced zucchini. Sauté until the vegetables become fragrant and translucent, building a flavorful base for the fried rice.

Once the onions turn transparent, add the cooked rice (about 1.5 bowls) to the pan. Use a spatula to break up the rice clumps and stir-fry it with the vegetables until the grains are well-separated and slightly toasted.
Step 7
Add the marinated clam meat to the pan and stir-fry it with the rice. Make sure to break up any clumps of clams as you cook. Finally, add the tuna extract (1 tsp) to enhance the savory flavor and adjust the overall seasoning to your liking.

Transfer the delicious clam fried rice to a serving plate. Sprinkle generously with sesame seeds and garnish with the sliced cucumber-flavored chili peppers. Your flavorful and texturally satisfying clam fried rice is now ready to be enjoyed!
