Ingredients- 1/2 bowl (approx. 100g) cooked Cham Dream Rice
- 1/2 cup (120ml) Milk
- 1/2 cup (120ml) Heavy Cream
- 50ml Plain Yogurt
- 1 Tbsp (15ml) Fresh Lemon Juice
- 30ml Sweetened Condensed Milk
- 3 Tbsp (45ml) Strawberry Jam
- 3 Tbsp (approx. 45g) Fresh Blueberries
- 30g Sugar
Cooking Instructions
Step 1
First, measure out and prepare all the ingredients needed for the ice cream. You can use leftover rice or instant rice.
Step 2
Cook the Cham Dream Rice so that each grain remains distinct and slightly firm. Gently loosen the cooked rice with chopsticks to prevent it from becoming mushy.
Step 3
In a saucepan, combine the cooked Cham Dream Rice, milk, and sugar. Cook over low heat, stirring constantly, until it reaches a thick, porridge-like consistency. Remove from heat and let it cool slightly. Be careful not to proceed to the next step while it’s too hot, as this can cause the ingredients to separate.
Step 4
In a large bowl, pour the cold heavy cream. Whip it using a hand mixer or a whisk until it forms soft peaks, about 80% whipped. The peaks should gently curl over.
Step 5
Add the fresh blueberries to the strawberry jam. Using a fork or a masher, gently crush the blueberries while mixing them into the jam. Leaving some whole or partially crushed blueberry pieces will add a pleasant texture.
Step 6
To the cooled rice mixture, add the whipped heavy cream, plain yogurt, sweetened condensed milk, and the prepared strawberry jam and blueberry mixture. Gently fold everything together using a spatula, being careful not to deflate the whipped cream. Use an upward lifting motion from the bottom of the bowl.
Step 7
Pour the ice cream mixture into an airtight container and freeze for at least 6 hours, or until firm. Covering the surface with plastic wrap or parchment paper before sealing can help prevent ice crystals from forming, resulting in a smoother texture.
Step 8
For an even smoother ice cream texture, remove the container from the freezer every 1-2 hours. Use a whisk or fork to break up any ice crystals and incorporate air. Repeating this process will prevent the ice cream from freezing too hard, like a sorbet, and will maintain its creamy consistency.
Step 9
Scoop the ice cream into serving bowls. Let it sit at room temperature for about 5 minutes before serving to achieve a softer consistency. Enjoy with fresh fruit or an extra drizzle of condensed milk, according to your preference!
