This savory and delicious Beef and Burdock Root Braise is a perfect side dish for rice and an excellent filling for kimbap. Main Ingredients- Burdock root 300g
- Beef brisket 200g (for japchae or bulgogi)
- Minced garlic 1/2 Tbsp (approx. 10g)
- Corn syrup 1 Tbsp (approx. 15g)
- Sesame oil 1/2 Tbsp (approx. 6g)
- Sesame seeds 1 Tbsp
Braising Sauce- Soy sauce 5 Tbsp (approx. 60g)
- Water 150ml
- Plum extract 2 Tbsp (approx. 25g)
- Sugar 2 Tbsp (approx. 25g)
- Cooking wine (Mirin) 1 Tbsp (approx. 15g)

Cooking Instructions
Step 1
First, peel the burdock root thoroughly and soak it in water for a short while to remove any impurities. Then, thinly julienne it into pieces about 0.3cm thick. Julienne burdock root allows the seasoning to penetrate evenly, making it more delicious.
Step 2
In a bowl, combine 5 Tbsp soy sauce, 150ml water, 2 Tbsp plum extract, 2 Tbsp sugar, and 1 Tbsp cooking wine. Stir well until the sugar dissolves to make a delicious braising sauce. Making the sauce in advance can save cooking time.
Step 3
Heat a lightly oiled pan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Once the garlic aroma is released, add the julienned burdock root and beef brisket. Stir-fry them together until the beef’s surface turns white.
Step 4
Once the beef is partially cooked, pour all the pre-made braising sauce into the pan. Turn the heat up to high and stir-fry briskly, allowing the sauce to reduce and coat all the ingredients evenly. It’s best to cook until the liquid is mostly evaporated.
Step 5
When almost all the liquid has evaporated and the sauce has nicely coated the ingredients, add 1 Tbsp corn syrup, 1/2 Tbsp sesame oil, and 1 Tbsp sesame seeds. Stir-fry one last time quickly. Once it has a nice sheen, turn off the heat and plate the finished Beef and Burdock Root Braise beautifully. Enjoy your delicious meal!
