Step 1
When you open the package, the angel hair pasta will be clumped together in its packing liquid. Take out the amount you need and rinse it under running water several times, gently separating the strands. Then, drain it thoroughly in a sieve. (★ It’s crucial to drain well so the salad doesn’t become watery!)

While the pasta is draining, let’s make the dressing. In a bowl, combine 2 Tbsp sugar, 2 Tbsp vinegar, 0.5 tsp salt, 2 Tbsp oligosaccharide, and 4 Tbsp plain yogurt. Whisk well until all ingredients are combined to create the dressing base.

Now it’s time to add mayonnaise to the dressing base. The amount of mayonnaise is best adjusted to your personal taste. Since yogurt brands can vary in sweetness and tanginess, taste as you go and add mayonnaise until it blends well with the yogurt base you’ve made.
