Main Ingredients

  • 1 stick Korean rice cake (garaetteok, approx. 200g)
  • 1.5 Tbsp sugar (approx. 20g)
  • 3 Tbsp water (approx. 45ml)
  • 1 piece butter (approx. 10g)

Cooking Instructions

First, prepare the Korean rice cakes. If they are hard, place them in boiling water and soak them until softened. (Adding the rice cakes after the water starts boiling helps prevent them from puffing up.) Once softened, briefly rinse the rice cakes under cold water and drain them well.

The rice cakes I’m using today were soft, so I used them directly without blanching. Cut them into bite-sized pieces, about 3-4 cm long. If they are too long, they can be difficult to cook or eat.

Heat a non-stick pan over medium-low heat, without adding any oil. Place the cut rice cakes in the pan. Be sure to maintain a medium-low heat; cooking over high heat can burn the outside quickly.

Gently pan-fry the rice cakes, turning them occasionally, until each side is golden brown and slightly crispy. Cook them until they achieve a delicious, lightly browned color.

Once the rice cakes are nicely browned, add 1.5 Tbsp sugar, 3 Tbsp water, and 1 piece of butter to the pan. Let the mixture melt and simmer over low heat to create a caramel sauce. Add the pan-fried rice cakes to the sauce and cook, tossing them gently, until they are coated and turn a caramel color. Be careful not to burn them, and stir until they achieve a beautiful caramel hue.

The rice cakes are now beautifully coated in a delicious caramel color. Arrange the finished rice cakes on parchment paper or baking paper, leaving some space between them to prevent sticking. Let them cool slightly so the caramel coating can set.
