I bought some fresh shiitake mushrooms at the market and decided to make them into a delicious sweet and sour stir-fry, similar to how we make chicken stir-fry! The chewy shiitake mushrooms, coated in a crispy batter and tossed in a sweet and tangy sauce, are a nutritious and delightful snack that everyone, young and old, will enjoy. They’re also a great addition to kids’ lunchboxes!

Ingredients

  • 7 shiitake mushrooms (approx. 150g)
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1 egg
  • 4 Tbsp potato starch (approx. 40g)
  • 1 cup grapeseed oil or cooking oil (approx. 200ml) – for frying

Sauce Ingredients

  • 6 Tbsp chili sauce (approx. 90ml)
  • 3 Tbsp honey or corn syrup (approx. 45ml)
  • 3 Tbsp soy sauce (approx. 45ml)
  • 1/2 chopped onion (approx. 50g)

Cooking Instructions

Step 1

First, let’s prepare the ingredients. Trim the tough stems from the shiitake mushrooms and cut them into four pieces each. Remove the seeds from the red bell pepper and green bell pepper, and cut them into pieces similar in size to the mushrooms. Finely mince the onion. Measure all the sauce ingredients and mix them together in a bowl.

Crack the egg into a bowl and whisk it well with a fork or whisk. Dip the shiitake mushroom pieces into the egg wash, ensuring they are evenly coated. Then, place the eggy mushrooms into a plastic bag, add 4 tablespoons of potato starch, and shake the bag well. This will create a light coating of starch on the mushrooms, making them extra crispy when fried.

Heat 1 cup of grapeseed oil in a frying pan over medium heat. Be careful not to let the oil get too hot. Carefully place the starch-coated shiitake mushrooms into the hot oil, one by one. Cover the pan briefly to help the mushrooms cook through. Once the bottoms of the mushrooms are golden brown, flip them over and fry the other sides until golden and crispy. Remove the fried mushrooms with a slotted spoon or tongs and place them on a wire rack lined with paper towels to drain excess oil.

In a separate pan, add the fried shiitake mushrooms, chopped bell peppers, and green peppers. Pour in the prepared sauce and add the minced onion. Cook over medium heat, stirring occasionally, until the sauce thickens to a syrupy consistency, about 1-2 minutes. Keep an eye on it to prevent burning.

Once the sauce has thickened, add the fried shiitake mushrooms and the prepared bell peppers and green peppers to the sauce. Gently toss everything together to ensure the mushrooms and vegetables are well coated with the sauce.

Continue to stir-fry for about 1 more minute, allowing the flavors to meld together, and your delicious shiitake mushroom sweet and sour stir-fry is ready! Avoid overcooking, as it can make the fried coating soggy. *Keep the heat on for only 1-2 minutes to finish.

Transfer the finished shiitake mushroom sweet and sour stir-fry to a serving plate. Sprinkle some sesame seeds on top for an extra nutty flavor and enjoy! It’s best served immediately while warm. ^^
