Main Ingredients
- Boiled sweet potato (mashed) 100g
- Boiled sweet potato (for topping, thinly sliced) 30g
- 1 fresh egg
- 50g granulated sugar
- 2-3 pinches fine salt
- 2g baking powder
- 30g melted unsalted butter
- 160g fresh milk
- 200g glutinous rice flour
- A little sliced almonds (for garnish)
Cooking Instructions
Step 1
In a bowl, crack 1 fresh egg. Add 50g of granulated sugar and 2-3 pinches of fine salt. Pour in 30g of unsalted butter, which you’ve gently melted in the microwave. Whisk lightly with a whisk or spatula until the ingredients are just combined; avoid overmixing.
Step 2
Slowly pour in 160g of fresh milk while continuing to mix gently. Ensure the liquid ingredients are well incorporated.
Step 3
Sift 200g of glutinous rice flour and 2g of baking powder into the bowl. Sifting is crucial to prevent lumps. Then, use a rubber spatula to mix until no dry flour is visible. The key is to mix gently until smooth.

Add 100g of mashed boiled sweet potato, prepared in advance, to the batter. Gently mix with the spatula until the sweet potato is evenly distributed throughout the batter. Small lumps of sweet potato are fine and add texture.

Lightly grease your pie mold with melted butter to prevent sticking. Fill the mold with about 80% of the batter. Filling it too full might cause it to overflow during baking. Use the spatula to flatten the surface of the batter for an even shape.
