Introducing a recipe for chewy, sweet, and savory stir-fried dried shredded squid (Jiminchae Ganjang Bokkeum) that everyone from kids to adults will love. Main Ingredients- Dried Shredded Squid (Jiminchae) 50g (about one handful)
Cooking Instructions
Step 1
Trim any tough ends from the dried shredded squid with scissors. Briefly soak it in cold water for about 10-20 seconds, then squeeze out excess water thoroughly with your hands. This step makes the squid tender and helps it absorb the sauce better.
Step 2
In a bowl, combine 1 Tbsp of soy sauce, 1 Tbsp of mirin, 1 Tbsp of oligosaccharide (or corn syrup), and 1/2 Tbsp of minced garlic. Mix well with a spoon to create a delicious seasoning sauce.
Step 3
Heat 1 Tbsp of cooking oil in a frying pan over medium-low heat. Add the prepared dried shredded squid and stir-fry for about 1-2 minutes until the moisture evaporates and it becomes lightly golden brown. Be careful not to burn it.
Step 4
Once most of the moisture has evaporated from the squid, pour the prepared seasoning sauce into the pan. Stir-fry quickly over high heat for less than 1 minute, ensuring the sauce evenly coats the squid. Avoid stir-frying for too long, as it can make the squid tough.
