Main Ingredients- Dried Persimmon (Chewy texture, well-dried) – 300g
- Scallions – 10 stalks
Seasoning Ingredients- Gochujang (Korean chili paste) – 1.5 Tbsp
- Fish Sauce (or Anchovy Sauce) – 1 Tbsp
- Gochugaru (Korean chili flakes) – 2/3 Tbsp
- Soy Sauce – 1 Tbsp
- Honey – 1 Tbsp (or Corn Syrup, Oligosaccharide)
- Sesame Oil – 1 Tbsp (omit if storing for a long time)
- Toasted Sesame Seeds – 1 Tbsp
- Gochujang (Korean chili paste) – 1.5 Tbsp
- Fish Sauce (or Anchovy Sauce) – 1 Tbsp
- Gochugaru (Korean chili flakes) – 2/3 Tbsp
- Soy Sauce – 1 Tbsp
- Honey – 1 Tbsp (or Corn Syrup, Oligosaccharide)
- Sesame Oil – 1 Tbsp (omit if storing for a long time)
- Toasted Sesame Seeds – 1 Tbsp
Cooking Instructions
Step 1
Honey adds sweetness and a glossy finish, but you can omit it or substitute it with corn syrup or oligosaccharide according to your preference. A touch of sweetness makes the dried persimmons look even more appetizing.

In a large bowl, combine the gochujang, gochugaru, and fish sauce to create the seasoning base.

Add the toasted sesame seeds, honey (or sweetener substitute), and soy sauce to the mixture. Stir well until all the seasoning ingredients are thoroughly combined.

Add the chewy dried persimmons to the prepared seasoning. Gently toss and mix them with your hands, ensuring the seasoning coats each piece evenly. Be careful not to mash the persimmons by mixing too vigorously.
